Nankhatai is a cookie, famous in pakistan and in india. Nankhatai is a basic eggless cookie made with clarified butter(ghee). When Bina posted her nankhatai recipe on daily tiffin, i tried it immediately and fell in love with these cookies, but it took too long (2 years) to post here.

whenever we crave for crispier biscuits, i would make nankhatai in minutes. its so easy to make. moreover, you can make it quick.

 Nankhatai

Yields - 30 cookies approx.

Preparation time: 15 mins
Baking time - 10-15 mins.
Recipe from : Daily tiffin  - Bina

Ingredients:

  • Maida / All purpose flour – 2 cup’s (200gms)
  • Sugar – 1 cup
  • Cardamom – 8
  • Ghee – ¾ cup
  • Baking powder – ½ tsp
  • Nuts to garnish(pista, cashew and badam)

Method:

      1. Pre-heat the oven at 150C for 10 minutes.

      2. Line your baking tray with butter paper and set aside.

      3. Powder the sugar along with cardamom pods.

      4. Sieve the maida flour along with baking powder. Also sieve the powdered sugar upon maida.

      5. Mix the flour well with your hands.

     6. Add Ghee to the flour and keep mixing, first the flour becomes like crumbles. keep on adding the    ghee till flour comes together as a smooth pilable dough. Do this process patiently, this process takes 10 minutes. (it consumes really lots of ghee, so go ahead and forget the calories.)

      7. Once you get the smooth pilable dough, pinch a small ball of dough and roll it with your palms. Slightly press it with your palms, so that the ball flattens a bit. Place the flattened ball over the butter paper. Likewise fill the butter paper. Press nuts of your choice over each nankhatai.

   8. Bake the Nankhatai in pre-heated oven at 150c for 10-12 minutes. Till the bottom of the nankhatai turns light brown in colour. Change the sides of tray in between, to ensure even baking.

   9. Remove from the oven and let it cool for 5 minutes, then transfer to cooling wrack and let it cool for another 5 minutes.

    10. Transfer the cooled nankhatai’s to an air tight container.

Serve with Hot tea, tell you what, thats the perfect way to eat these cookies.

Notes:

You can avoid egg wash and brush just with Milk.

I made the scones thinner, you can make them thick and serve with Jam.

I Grilled the scones for about 2 minutes, to make the scones crisper outside.

These Butter Cookies remembered me the Butter Biscuits. During my childhood, i remember my mom used to send all the necessary ingredients for the butter biscuits in big buckets(thooku) to our nearby town villupuram. Our Helper Pushpa takes them to some bakery in villupuram and comes home with butter biscuits taking pain in lifting all along thru bus. Life at villiage surely lacks luxuries but i bet, They are Full of Memories!!

Wishing You All Very Very Happy New Year! Last decade had more for me, College, Marriage, Kid and learning at different stops of Life. One big thing i learnt in last decade is Cooking. When i got married in 2004, i knew to make Maggi Noodles, Bread Upma, Pizza's with store bought Pizza Base. In the last 6 years, Cooking turned to be a big Passion for me. as a result you are reading this Food Blog:)

Home made Cookies

Okay, what's my New Year Resolution? Its not just for this Year, as i think, it will be in long term, for the next decade atleast. One is to feed the Family Healthier way. Second, I should Think several times before taking important decisions. Third, to enjoy every bit of Life.  in simple, iam trying to correct the mistakes of last decade.

If you ask me what happened to my last Year's Resolution, Yes i was able to follow it for 6 months atleast.
Last Year's Resolutions were, not to expect other hands for help.( it purposely meant, that i should do all my house-held work without maid). I survived without domestic help for 6 months. later i was pushed to have a helper, as hubby went abroad, and i needed someone to looks after the kid, when i had to look after outside work.

Double Chocolate Cookie

Next was to reduce maida, oil in cooking.  and i have reduced the oil consumption from 1 and half litre a month to 1 litre. but could'nt reduce maida, as iam experimenting on baking mode, maida/APF becomes  must for the experiments.

Coming to the Chocolate Temptations Cookies, I tried it out, from my Cakes and Bakes Book. I just followed the recipe. It turned out fabulous and vanished in just two days. My Son and I loved it!

Chocolate Cookies

To Decorate the Cookies:

With the help of double boiler or in double boiling method(refer step 2), melt the chocolate, butter and icing sugar together. once the chocolate gets melted and mix turns thick, add milk to make the mix thinner.
Pour the mix to a Piping bag and pipe lines over the cookies.

* I used Milk cover instead of Piping Bag.
* I did a foolishness of using Demarara Sugar instead of Icing sugar and it did'nt melt and struck in between while piping chocolate lines.

I baked Cookies for first time, and it came out okay. it got crispier texture out and little crumble texture in. But we all liked it a lot. I was not so dare enough to try chocolate cookies or choco-chip cookies, as this is the first time, fearing that it would not turn good. Using Cinnamon was also easier, the flavour and taste was really good. so any first time bakers reading this, Just go ahead with Cinnamon cookies, if you are baking cookies for the first time.
I referred lots of website's and took bits and pieces from each recipe. and now presenting what i did.

cinnamon flat cookies

Ingredients: (10 -14 cookies)

2. Sugar - 1/3 cup
3. Butter - 100gms
4. Cinnamon - 1' stick
5. Egg - 1
6. Vanilla Essence - 2 tsp's
7. Baking Powder - 1/2 tsp
8. Baking Soda - 1/2 tsp
9. Salt - a pinch

Method:

1. Bring the Butter to Room Temperature.

2. Grind the Sugar and Cinnamon to fine powder.

3. Beat the Egg with Vanilla Essence and keep aside. (Give a pulse in your mixer)

4. Mix salt, baking soda and baking powder to the flour and sift the flour twice.

5. Beat the Butter and Sugar. I use hand mixer and beated it for about 2 minute's.

6. After Beating Butter and Sugar, add Egg-vanilla mix and mix well with a wooden spoon.

7. Add Flour and mix with the wooden spoon very slowly.

8. The cookie dough will be very soft now, so cover the dough and refrigerate it for 1 hour.

9. After 1 hr refrigeration, cookie dough gets firm and now its ready to get baked.

10. Line Baking Plate with Baking sheet. apply pinch butter on four cornours of baking plate, before lining with baking sheet, this keeps the sheet unmovable. I would recommend double lining, if you want your cookies little browned at the bottom.

11. Pre-Heat the oven to 350F / 180C.

12. Rub your hand with some flour and take a small ball of cookie dough and flatten in on baking sheet. likewise place cookie dough balls with enough space for it to expand on the baking sheet.
with fork make some designs if you wish.
i gave very little space and ended with many shapeless cookies.

13. Bake the cookies for 12 minutes and see, if the edges got browned, if not, bake it for another 2 or 3 minutes.

14. Cool them completely for about 15 minutes and then shift to air tight container.

Melt some chocolate and drizzle over the cookies and cool it for a while.
