This stuffed puri is a famous north indian break-fast. Bedmi puri is between kachori and puri, as the stuffing is made with urad dal. I eyed on this puri from tarla dalal's cookbook. even i made it once long back, me and hubby liked these puri's a lot! Who would say no to a healthy puri like this? when i tried out these puri's last saturday, i clicked pictures of these lovely puri's to share with you all.

These stuffed puri is normally served with aloo sabzi. but i served with curd and pickle, like we serve stuffed paratha's. it also paired well with the puri's.

Try these stuffed puri for a week end break-fast. sure your family will like it. if you are serving for kids, reduce the dry red chilli and pepper in spice mix, so that they can also eat these healthy stuffed puri!

makes- 8 - 10 puri's
soaking time - 4 hours
preparation time - less than 45 mins
recipe from tarla dalal

Ingredients:

To fry the puri - 1 and 1/4 cup sunflower oil

For the dough:

Wheat flour - 1 and 1/4 cup
Nigella seeds / karunjeeragam / kalonji  - 1/2 tsp
Salt - 1 tsp
Water - 1 cup (approx. to knead)
Oil - 1/2 tsp

For the stuffing:

Urad dal  / Split black gram - 1/2 cup
Oil - 1 tsp

Dry roast and ground the following into a corase powder: (spice mix)

Corriander seeds - 1 tsp
Dry red chilli - 2
Pepper - 5
Saunf / sombu - 1 tsp
Cumin - 1 tsp

Method:

Soak the split black gram / urad dal / udacha ulundhu with skin in water for about 4 hours.

To prepare the dough, take wheat flour in a large bowl, add salt and nigella seeda and mix with the flour. keep sprinkling little water and knead them all together into a pilable dough. add 1/2 tsp oil towards the end of kneading and knead well. the dough should be little tight than we knead for  chapathi/phulka. Divide the dough into 8-9 balls. keep aside.

Dry roast the corriander seeds, dry red chilli, pepper, saunf and cumin. grind the roasted one's into a coarse powder.

Drain the soaked dal completely without water and grind them coarsely in your mixer. sprinkle little water if needed. add salt to taste and grind the dal coarser.

Heat 1 tsp oil in a pan, add the coarsely ground urad dal and the spice mix and mix well. mix them in medium flame for about a minute. the urad dal tends to stick to the pan, anyways make sure the mix is dry and well mixed with the spice mix. remove from flame and let it cool. once cooled divide the urad dal mix into small ball's that has to be stuffed.

Now roll the wheat dough into a thick 3'inch diameter round and place the urad dal stuffing in centre and fold all the edges of the dough to cover the urad dal stuffing. dust it with little flour and roll them lightly into a medium shaped puri. similarly do the stuffing and roll the other puri's.

Heat 1 and 1/4 cup of oil in deep pan and fry the rolled out stuffed puri's. fry till they reach golden brown in colour. fry the both sides of the puri. serve the puri hot with aloo sabzi or with curd and pickle.

Notes:

I used skinned split urad dal. as skinned dal is good, you can also use it. you can also try it in whole urad dal de-skinned.

Make sure the urad dal is grinded coarsely with little water, only then the stuffing will be intact when rolling the puri.

 


Me and my son love Bhindi very much. Usually it used to be Vendakkai poriyal at home. After learning to make bhindi in microwave, I make these Masala stuffed bhindi quite often.  After getting request for Bhindi Fry recipe, I googled and found sanjeev kapoor’s besanwali bhindi fry.  It tasted good as it’s cooked with shallots and besan flour. This Bhindi fry can be had with sambhar rice or Roti.


Microwave oven makes Magic with Bhindi. I microwave chopped Bhindi pieces with a tsp of oil and microwave it on high for 4 minutes. Then i use it for vendakkai sambhar or vendakkai morkuzhambu. It saves time and oil.


Ingredients:

Bhindi / Okra / Vendakkai - 12 (of same size)
Shallots / Small onions – 8 (Peeled and chopped)
Besan flour / Kadala Maavu – 2 tbsp
Oil – 2 tbsp
Mustard – ½ tsp
Curry leaves – 1 sprig

Mix the following powder’s together

Turmeric powder – a pinch
Sambhar Powder or Chilly powder – 1 and half tsp
Dhaniya / Corriander Powder – 1 tsp
Cumin powder – 1 tsp
Dry Mango Powder / Amchur – ½ tsp
Garam masala – ½ tsp
Salt – to taste


Method:

Choose small and tender Bhindi s. It cooks easily and taste’s good too.  Wash the bhindis and wipe them with a clean cloth. Trim the heads of bhindis. Give a slit to all bhindis from top and end it just before its tail.

Mix the powders (turmeric, sambhar, dhaniya, cumin, amchur, garam masala and salt) in a bowl.

Fill the masala powders into the slit of bhindis with a help of a spoon. Half a spoon of masala’s is enough to fill a single bhindi.

Heat Oil in a Pan, add mustard, let it splutter and then add curry leaves along with small onions. Once the small onions are almost cooked, add the besan flour and mix with the onions. Give a minute, till the besan flour gets roasted along with the onions.

Now add the stuffed Bhindis to the pan and give a mix, lower the flame and let the bhindi gets cooked for about 5-7 minutes.  Add little oil, if bhindis start sticking to the pan. Cook till the bhindis shrink and change dark in color.

Or

You can alternatively cook in microwave for easy job. After filling the masala’s into the slit of bhindis, place them in a microwave bowl.  Sprinkle 2 tsp of oil over the bhindis and microwave on high power (900w) for about 4 minutes.  After removing from microwave, Heat Oil in a Pan, add mustard, let it splutter and then add curry leaves along with small onions. Add little salt just enough for small onions. Once the small onions are almost cooked, add the besan flour and mix with the onions. Give a minute, till the besan flour gets roasted along with the onions. Then add microwave cooked bhindis and wrap them up with onions and besan flour.

Garnish with chopped coriander leaves.

Serve with Roti’s or with Rice and Sambhar.

Gatte ki sabzi is a dish, that you can never miss out when you have Rajasthani meal. Gatte's are made with besan flour, and this sabzi is just made with gatte and with no other vegetables. any way you can add tomatoes as i did, but its optional.

 
When i first made this sabzi at home, i did not have any idea about it. even i had never tasted it before. now(its been 4 years since i have tried it). i make this sabzi quite often when i run out of vegetables. also i have tasted this sabzi in a rajasthani restaurant. so now i can prepare this quite good with the experiences learned.

I kept googling on what to try for RCI-Rajasthan hosted by padma. finally i landed on Vee's Gatte ki sabzi. I have tried quite few dishes from her blog...where she explains so neatly, that we cannot get confused with the order of what to do. she is really the best one to narrate the method of cooking.

I can't narrate things like her..but just tell you what i did..well about this sabzi..it was so different in taste. me & hubby loved it a lot. and he asked me to prepare this for lunch regularly in this summer. It pairs well with chapathi as well as with rice.
 
Ingredients:

For the gatte:

Besan flour / Bengal gram flour - 1 cup
Turmeric powder - a pinch
Salt to taste
Red chilli powder - 1 tsp
Kasuri methi - 1/2 tsp
Ajwain / Carrom seeds - 1/4 tsp
Oil - 2 tsp's

For the gravy:

Curd / Yogurt - 1 cup
Tomatoes - 2
Garlic paste - 1 tsp
Red chilli powder - 1 or 2 tsp
Corriander powder - 2 tsp
Cumin powder - 1 tsp

For tempering:

Ghee - 2 tsp + Oil - 1 tsp
Cumin - 1/2 tsp
Hing / Asafoetida - 1/4 tsp

Corriander leaves to garnish

Method:




















1. First, to prepare gatte, in a large bowl, mix besan flour, salt to taste, ajwain seeds, kasuri methi, turmeric powder, red chilli powder and mix well.

2. Now keep sprinkling water and knead to form into a firm and smooth dough. add 2 tsp of oil to the dough and knead again. shape the dough into a 1/2 inch diameter roll.

3. In a wide large bowl / wide pressure cooker pan, add 3 cup's of water and let it boil, once the water starts to boil, put the roll into the water and let the roll cook for about 15 minutes at high flame.
 
4. Once the gatte roll is cooked, remove the gatte seperately from the water and let it cool down. once cooled, slice the gatte into 1/2 inch pieces.

5.Once you have sliced the gatte's, it is optional to fry the gatte's in oil. if you are frying the gatte's they may break up in the oil a little. after frying, they become little crisper, this way you can ensure that the gatte's are fully cooked.
6. Heat a cup of water, put the 2 tomatoes in it and let it boil for 5 mins, so that the tomato skin peel's a little. drain the tomatoes, cool them, peel it's skin, grind them into a smooth tomato puree and set aside.
 
7. Now to prepare the gravy, heat a pan, add 2 tsp's of ghee, add cumin seeds, hing, garlic paste and roaast well. then add the tomato puree and let it boil well and gets thickened for about 1 or 2 mins. Then add the sliced gatte's and mix well. reduce the flame before adding the curd.
 
8. Take a cup of curd and using your whisker or fork, beat the curd well. now add this beaten curd to the gravy in low flame and mix well. then add turmeric powder, red chilli powder, corriander powder, cumin powder, garam masala(optional) to the gravy and mix well. let the mix keep bubbling in low flame for about 5-10 minutes, till you see the oil on the sides of the gravy.
 
9. Remove the gravy from slow flame and garnish with corriander leaves.
 
Serve with rice or roti.

Notes:
 
It is optional to add tomatoes, it just makes the gravy little sour and gives a good red colour to the gravy.
 
Never add curd in high flame, it may curdle and the sabzi may get bad.
