Pudhina baby aloo rice

It is very good to eat pudhina. as it is the best for our digestive system. Making kids eat pudhina is difficult. Kids will love to eat pudhina rice when done in this way. just add 1 or 1/2 green chilly, so that kids may not find this rice spicy.

I hate variety rice to the core, right from my childhood. If my mom packs me any variety rice other than tomato rice and curd rice for lunch, I come home in the evening without even tasting a spoon of it. I am so much adamant on this. Even now, i hate tamarind rice, lemon rice and this coconut rice to the core! Then if you ask me, why i am posting the dish i hate the most, then its because now i started to feel my mother feelings, when my son come home without eating few food which he do not like. and the next reason is my mom makes this coconut rice interesting by adding appalam to it. so i just want to share it here, So you could try and make the kids eat coconut rice!

We call it as appala poo sadam, may be because it has appalam and thengaai poo in it. You can prepare this in a jiffy, if you have grated coconut and appalams ready in hand. You should serve this appala poo sadam / coconut rice with liquid coconut chutney and also with potato roast or potato chips. Serving this plain will not be so good and may develop haters like me!

I served my appala poo sadam with baby potato roast. It was such a good combo.
Finally the pictures are shot with my new Canon 600d. starting auspiciously with the coconut!! I made a mistake with white balance and the pics started to look pale. I am still learning the new camera, hope i learn quick!! over to recipe now.

Ingredients:

Cooked rice - 2 cup's
Fresh Grated coconut - 3/4 cup
Appalam - 4 (already fried / ready to eat)
Sesame oil - 1 tsp

For tempering:

Coconut oil / Sesame oil - 1 tbsp
Mustard - 1 tsp
Peanuts - 2 tsp's
Chana dal - 1 tsp
Urad dal - 2 tsp's
Curry leaves - 1 sprig
Green chilli - 2
Dry Red chilli - 1

Method:

Cook the rice, with right amount of water(rice:water should be 1:2) in pressure cooker for about 2 or 3 whistle count. make sure rice do not get mashy, Rice should be grains apart. you may also use basmati rice. Once the rice is cooked, spread the rice in wide bowl or plate, drizzle a tsp of coconut or sesame oil over the rice, mix with a fork and leave the rice to get cool.
Heat 1 tbsp of coconut oil in a pan, add mustard and let it pop, then add chana dal, urad dal, peanuts green & dry red chilli and roast them till they become golden in color. add curry leaves and fry it too. then add the grated coconut's and fry in low flame for about a minute mixing with the other tempering ingredients. Now add salt to taste.
Crush the appalam with your hands and just mix up with the other ingredients in the pan, mix it all up. switch off the flame. Then add rice to the pan, if possible you can toss the pan or slowly mix the rice with the tempering without breaking the rice. Now appala poo sadam is ready to serve.
Serve with little watery coconut chutney or with potato chips or potato roast.
 Note:

Only when the rice is served immediately the appalam will remain crisp. if served later, appalam turns soft, but no matter, still you can enjoy its taste.

Add Salt, keeping in mind that of the salt in appalam.

Whenever my sister anu says, she fed her kid paruppu sadam, i used to think it as rice mixed with dal and ghee. When Sharmi blogged arisi paruppu sadam, i liked it much and was telling about it to my sis. then she told thats what she was feeding her kid often. she told the recipe in a flow. i straight went into the kitchen and made in minutes. Now i have prepared this several times. this is such a easy, pretty fast meal, which you can serve your kids wholeheartedly with lots of ghee.

I prefer to serve this sadam with egg poriyal or appalam. even potato roast will make a nice combination to this rice.

I tried out making video, it was just a trial, please excuse this very very amateur video, as its shot from one hand as the other hand was cooking! sure will get a tripod soon and make better videos in future.

  • 2 carrot

Ingredients for Masala powder:

  • 1/2 cup channa dal
  • 1/2 cup dry red chillies
  • 1/4 cup urad dal

Summer Lunch with Carrot rice and chilled cut fruits Mango and Pappaya

Method:

  1. Dry roast the ingredients in medium flame one by one. start with chana dal, urad dal, dhania. then dry roast cumin, fenugreek, cinnamon and cloves, khasa-khasa. following roast the dry coconut in slow flame. then roast the dry red chillies, curry leaves and hing separately.

  2. Cool the roasted ingredients. using your mixie, make them into a fine powder.

  3. Store the masala powder in an air tight jar. use it within a month, as it has dry coconut or store in your fridge.

  4. Soak the basmati rice for about 20 minutes in sufficient water, drain the water and cook basmati rice with 1 and half cup's of water. i used my microwave and cooked in 1 and half cup's of water for about 12 minutes at 900w. rice and water ratio is 1 : 1 and 1/2. you can cook the rice on stove top with the same ratio. cool the cooked basmati rice in a wide bowl. mix 1 tsp of sesame oil to the rice and give a soft stir with a fork, so that the grains separate.

  5. Peel the skin of the carrot. wash them and soak in hot water for about 10 -15 minutes. this is to help grating the carrot smoothly. after 15 minutes of soaking, grate the carrot's and set aside.

  6. Heat a pan, add oil, when its heated, add mustard and let it splutter. then add urad dal and curry leaves. now add the masala powder and salt to the oil and roast the masala powder for just a few seconds in slow flame. then add salt and mix well along with the masala.

  7. Add the cooked basmati rice and mix with the masala's. then add the grated carrot and mix slowly, so that you do not break the rice grains. remove from flame and transfer to the serving bowl.

Notes:

1. The masala powder can also be used to prepare capsicum rice and cabbage rice.

2. Use a pinch of turmeric powder, that makes the difference in color of the rice.

For the past few months, i have been making biryani regularly during weekend's. its easy to prepare biryani rather than making a meal with sambhar, curry and a poriyal. other than that cleaning becomes easy with this one pot meal. i just clean up, watching the time when the biryani cooks up in the cooker.

This is simple biryani recipe than the previous biryani i posted. i hate sour taste in biryani. sourness is because of tomatoes and curd added to it. i have not used tomatoes and curd in this recipe. this is one of our favorite biryani. adding coconut milk to biryani makes it more rich and tasty.

Summer is at its peak here. drinking tender coconut becomes a daily routine. Hubby Dear just bought tender coconut and was making me drink, while i was clicking the pictures. i even used the coconut for clicking :) that is the bad habit of being food blogger.

Mughalai's introduced us biryani, have you ever wondered, what would our ancestors made for one pot meal before biryani. my grand mom's never prepared biryani. but they prepare delicious kadamba sambhar sadam.  it is not at all our tradition to have biryani. slowly now biryani is ruling all over here in tamil nadu. now a days its very difficult to spot kootanchoru or sambhar sadam in hotel menu(all the bhavan's have. i agree. but others?)

Kootanchoru or Kadamba sambhar sadam is cooking rice, dal, vegetables and greens together in one pot. what a healthy one pot meal that could be.  Have you ever cooked in your childhood with your friends? or have you had your dinner with your family down the moon on a full moon day?

During my childhood, we four friends bring small amount of rice, vegetables, dal from our home's and cook in a small stove made by us with just three stones and some sticks. cooking together and eating together was so much fun then.

Kootanchoru / Kadam Sambhar Sadam

  2. Wash and soak the rice and dal together for 30 minutes.

  3. Chop the vegetables into small pieces. Boil the tamarind with 1/4 of water and wait till it cools and get the tamarind extract ready.

  4. Clean and was the Greens and chop them.

  5. In a wide bottomed pressure cooker, add rice, dal, vegetables, greens, tamarind extract, turmeric powder, sambhar powder, little salt and 5 cup's of water. pressure cook upto 5 whistles. let the steam escape and  place the pressure cooker again on medium flame.

Mushroom, this is one veggie(?) which cooks so fast and yet you can make super yummy dishes with it. My cook makes this mushroom biryani. mostly on weekends, i ask her to make this mushroom biryani, which she makes super fast and perfect!

Mushrooms should be cooked the day you buy. fresh mushrooms are good to cook. cleaning mushroom is very important. i normally wash each and every mushroom by scratching the dirt. then i wipe the mushrooms with a clean cloth before chopping it.

If you are seeing the basmati rice grains distinct and apart, the credit goes to Rak's kitchen. she was so kind to help me with suggesting good basmati rice and the water level for it. Thanks Raks!

Someday's i would not like to make two or three dishes for lunch and want to come out of kitchen soon with less work. tamarind rice, chitranna, vangi bath, arisi paruppu sadham are all the one's that i make to free me.
well the next day i cant do the same, literally i cant survive without sambhar and poriyal. may be genetically my tummy is trained like that:)

I remember seeing this karnataka recipe on my great grand mother's recipe collection. wonder how she managed to get the traditional karnataka recipes without any cookbooks, visits to the state and all.
My grandmother is a pro in making bisi bele bath. whenever we want to pack food to have in mid of travel, she wakes up as early at 3'o' clock and makes fresh masala and prepares bisi-bele bath. OMG, i am craving for it right now!!-):

Vangi Bath Masala powder

    Vangi Bath

Vangi bhath, i tasted it first at Mavalli Tiffin Rooms(MTR), from then i used to cook this vangi bhath once in a week.

Vangi bath is truly addictive for brinjal lovers. so going ahead with a warning...I used to cook vangi bath atleast once in a week, when we were in bangalore using MTR vangi bath masala.

    Vangi Bath

    Ingredients:

    • Purple Brinjal - 1/2 kg
    • Basmati / Long Grain Rice - 1 cup / 100grams
    • Onion - 1(optional)
    • Dessicated dry coconut - 1 tbsp
    • Turmeric powder - a pinch
    • Vangi bath masala powder - 3 tsp

    For tempering:

    • 3 tbsp of sesame oil
    • 1/4 tsp of mustard
    • 1/2 tsp of chana dal
    • 1/2 tsp of urad dal
    • 2 dry red chillies
    • 1 tbsp of roasted peanuts (without skin)
    • 3 cahesws
    • 1 sprig curry leaves

    Method:

    1. Soak the basmati rice for about 20 minutes in sufficient water, drain the water and cook basmati rice with 1 and half cup's of water. i used my microwave and cooked in 1 and half cup's of water for about 12 minutes at 900w. rice and water ratio is 1: 1 and 1/2. you can cook the rice on stove top with the same ratio. cool the cooked basmati rice in a wide bowl. mix 1 tsp of sesame oil to the rice and give a soft stir with the spoon, so that the grains are separate.
    2. Chop Brinjal's into big chunks and let them be in a cup of water, to avoid darkening.
    3. In a pan, start for tempering, heat 3 tbsp's of oil, add mustard and let it splutter, add chana dal, urad dal, cashews, peanuts, dry red chillies one by one and roast them all till they turn into light golden in color. add curry leaves.
    4. Add finely chopped onions and saute till they turn translucent. then add chopped brinjal and fry it in medium flame. add salt and turmeric powder and roast the brinjal. add little oil, if they start sticking to the pan.
    5. Now add vangi bath masala powder to the brinjal's and give a good mix. turn the flame to slow and close the pan with a lid, and let the brinjal's get cooked along with the masala.
    6. Brinjal gets cooked within 10 minutes. remove from the flame and transfer to the bowl of cooled basmati rice. slowly mix the masal's  with the rice.
    7. Garnish with chopped corriander leaves and 1 tsp of dessicated dry coconut.

    Serve warm with onion raita.

    Notes:

Using onions is optional. this tastes good even without onions.

You can add tamarind while adding vangi bath masala powder, only if you love little tangy flavoured vangi bath.

If you tell any kannadiga, that you made vangi bath with MTR vangi bath masala mix, they will give you a weird look. iam telling you this from my experience.  they always trust their home made masala.  iam happy, finally i made my own masala!

Biryani's are for Weekends at our home. I delayed posting biryani recipe, as i wanted to find out fool-proof recipe. After getting live demo from one of our friend Anitha on how to prepare this biryani, i could'nt wait long and tried it instantly. It came out so Perfect! Thanks Anitha!

Biryani is of different types, I largely confuse biryani with Pulao. Later i started to differentiate as, If rice and veggies cooked in thick coconut milk its Pulao. If rice and Veggies cooked by adding Ginger-garlic paste and masala's its Biryani. I sometimes cook biryani in coconut milk, Its one of the perfect tasting biryani.

This Biryani recipe is so simple and easy. Its Cooked in Pressure cooker, thus makes an easy one pot meal.
I have got many failed attempts on preparing biryani. There are two main points to be followed. One, Measure and use rice-water ratio(its always 1 : 1 and 1/2) . Then pressure cook exactly for 12 minutes in medium flame. One more point in making Pressure Cooker Biryani is, always use Aluminium Pressure cooker, this avoids the rice sticking to the bottom and browning.

This Biryani Recipe has Curd, which makes this Tastier. I Personally felt, this Biryani gets little tangy  taste from Curd and Tomatoes and also Lemon. So adding Chilli Powder for Spicyness is must. Altogether This Biryani tastes Spicy and Tangy with loads of Vegetables.

I used India Gate Basmati Rice - Tibar. I have also tried with Lal Quilla upon Rak's Suggestion, which worked out Very Perfect. Thanks Raks!

My Favourite Food is always hearty sambhar sadham and cool thayir sadham / curd rice. Sambhar Rice with appalam or with potato curry is a perfect combination. I always prepare this sambhar rice, when i have guests. The secret of tasty sambhar sadham depends on the vegetables we add. Drumstick(murungai kaai), Eggplant(kathrikkaai), Radish(mullangi), knol khol (nookal) and capsicum (kudai milagaai) are must. Adding shallots / pearl onions ( sambhar / chinna vengayam ) is must. the other trick is, boiling these vegetables in tamarind juice. I use Sakthi Masala Sambhar Powder. You can use your own sambhar powder. Try using Ghee / Butter to have a tasty Sambhar Rice.
