I love shopping online at jabong. When bharathy asked to send entries for her spicy recipe event, i wanted to prepare a recipe with red chilli, just to suit her blog logo! i tried chilli bread sticks, chilli-mint flavored paneer. no dish looked sexy and hot with dry red chilli!

Hot Chocolate drink

I still do not know, whether bharathy will accept my entry or not, as the deadkine for the submission  just closed yesterday.

Chilli Hot Chocolate

serves - 3
preparation and cookin time - less than 5 mins

Ingredients:

Dark chocolate - 45 gms
Milk - 250 ml
Red chilli flakes - 1/2 tsp
Cinnamon - 1" inch size stick
Sugar - 4 tsp

Method:

Heat Milk in a pan, add dark chocolate and cinnamon stick and keep stirring, till the chocolate melts.
add sugar and mix well. bring the milk to boil and reduce the flame. let the chocolate milk simmer for about 1 or 2 minutes. finally remove the cinnamon stick and add red chilli flakes. remove from the flame. Serve hot to your loved ones.
 

Chilli Chocolate drink

Note:

To prepare dry red chilli flakes, take 3 o 4 dry red chilli and remove the stalks of the red chillies. grind coarsely so that you get chilli flakes.

Just a pinch of chilli flakes will do for a serving.

First i need to scream and tell you, that i am doing a work continously, it is - i am blogging here for the past five years!! Did i tell you, that i was contacted by my neighbour to bake cupcakes for their get together party. and i delivered about 30 of these cupcakes. the host of the party said, everyone liked & told me, many enquired, whether i would take orders from them too!! i also made kaju katli's for my other neighbour and Eggless dates cake for a birthday party! seems everyone liked my bakes and it makes me happy!! 



so this cupcake recipe is tried by me for more than 5 times in a row for this year alone!


makes - 18 muffins
baking time - 20 mins

Ingredients:

1 and 1/4 cup of All purpose flour / maida
1 tsp baking soda
2 tsp baking powder
a tiny pinch of salt
2 Egg's
2 tbsp of milk
1/2 cup of sugar (powdered)
1/2 cup of butter (Butter at room temperature)
1/4 cup of cocoa powder
1/3 cup chocolate chips

for whipped cream frosting:

Whipped cream powder - 50 gm / 1 pack (i used blue bird whipped cream)
Cold ice water - 90 ml

Method:

Pre-heat the oven/OTG to 200C. Line your muffin tray with cup cake liners.

Sieve the flour,baking soda, baking powder, salt and cocoa powder together for atleast two times so that the flour, mixes well with b.soda and b.powder.

In a large glass bowl, beat together the butter and powdered sugar until pale and fluffy. i used my electric mixer and it always takes about 2-3 minutes at medium speed to cream the butter pale and fluffy. Break in the egg's one by one and beating well after adding each egg.

Start adding flour to the bowl in three intervals and use your wooden spoon or spatula to fold in the flour. add milk and chocolate chips and mix everything together. Divide the batter to the lined muffin tray.

Bake for about 20 minutes, until a toothpick inserted to the centre of the muffin comes out clean. once the muffins are done, cool them for about 10 minutes.

To make the whipped cream frosting, In a seperate mixing bowl, beat together the whipped cream powder and the ice cold water(90ml.) for about 3 minutes in high speed with your electric mixer. once the cream is whipped, put the whipped cream in freezer for about 10 minutes before frosting the muffins.

Just spread a spoon of frosting over each muffins sprinkle few chocolate chips on top. it is better to to do frosting just before serving, as the frosting falls/melts down in few minutes for indian climate. or after frosting, refrigerate the muffins till you serve.

I am not a coffee person till last year. I started taking coffee while i prepare filter coffee for my domestic helper. who can resist filter coffee? I  do not know to prepare coffee during my hostel days. my friends help me out with decoction and mixing. 



I remember once i had to tell on how to make filter coffee in my class 11 for english viva. when i told, "mix coffee powder with hot milk", everyone in the class started to laugh. When my English teacher started to yell at me, i was just blinking, as i thought that i told the right one. but when the other girl started to tell, i realized, oh there are so many steps in it. which i finished in just one step. sorry to bore you with my memories. 



So with this hot climate, i wanted to have cold coffee. i looked many sites, finally this chocolate coffee attracted me. chocolate y coffee is what i arrived at. 


To prepare chocolate sauce:


Ingredients:


  • Dark chocolate - 25 gms / 1/4 cup
  • Butter - 1/2 tbsp
  • Sugar / brown sugar - 3 tsp
  • Salt - a small pinch
  • Honey / Corn syrup - 1 tsp
  • Milk - 3 tbsp

Method:

  1. To prepare chocolate syrup, it should be cooked using double boiling technique. so never cook chocolate in direct heat as it may burn the chocolate. 

  2. For double boiling, take a wide vessel filled half with water. boil the water. take another medium sized bowl that could sit inside the wide vessel. 

  3. Put the dark chocolate, sugar and milk to the medium sized bowl sitting over the boiling water on a wide vessel. reduce the flame to low and start stirring with a wooden spoon till the chocolate melts and blends well with milk.

  4. Once the chocolate had melted, add honey and butter. keep stirring and in less than 2 minutes the chocolate sauce get thicker. on cooling it may get still thicker, so take it off, while the sauce starts thickening.

  5. The chocolate sauce will be looking shiny and you can feel it getting thickening. remove it at that point.

I prepared the chocolate syrup a while back and totally forgot.  here is when i prepared last.

To prepare cold chocolate coffee

Ingredients:
  • Chilled milk - 1 tall glass (boiled and chilled)
  • Instant coffee powder - 2 tsp  (or)
  • Filter Coffee decoction - 2 tbsp
  • Cocoa powder - 1/2 tsp
  • Sugar - 2 or 3 tsp
  • Chocolate syrup - 1 tsp

Method:

  1. Take a serving glass and drizzle the chocolate syrup into it to create patterns. tilt the glass so that syrup flows and the patterns get set.

  2. In your mixie jar, add milk, sugar, coffee powder or decoction, cocoa powder and blend well.

  3. Now pour the cold coffee into the chocolate syrup drizzled glass and serve chilled.




Molten Chocolate Lava Cake, sure you should love this, if you are Chocolate lover. I first had this sort of cake at dominos pizza. once even i tried by making nutella indentations inside chocolate cup cakes. which was good, but i did'nt see chocolate lava from it!! On Googling, i landed on my favourite Joy of Baking, referred to me by Nirmala. I just followed  the recipe and the outcome was Just Perfect to produce Lava..

Chocolate Lava Cake


Cake was just like Pudding. It's Chocolate inside and outside its little crisper and crumblier. It was Heavenly with Vanilla Ice Cream. I could'nt click decent pictures, as the Ice-cream melted over the hot cake. and the cake raised so good, but it went down soon after it is taken from oven. you got to experience this chocolate magic..

Molten Lava Cake

Ingredients:

1/4 Cup     Butter (or) Margarine
1/3 Cup     Sugar (Powdered)
2                Egg's (seperated)
1 tsp          Vanilla extract
1 Cup        Dark Chocolate (6 oz. approx. 180 gms)

Method:

*  Melt the Dark Chocolate and Butter by Double Boiling Method.

*  Pre-Heat the Oven to 200C.

*  Take Half of the mentioned Powdered Sugar in the recipe and beat with Egg Yolks with Hand Mixer, till it turns out fluffy and pale white. Add Vanilla extract and beat in middle. It takes about 3 minutes by hand mixer and 5 minutes, if beating by hand. To this add the Melted Dark Chocolate, Butter and Beat with Hand mixer, till mixture is evenly mixed.

* In Another Bowl, beat the Egg White's with a pinch of salt, till soft peaks are formed. Add the rest of the granulated sugar while beating. Now mix it with the egg yolks and melted chocolate mixture. Mix them all together with a wooden spoon or spatula.

* Grease the Ramekin bowl's and dust it with some powdered sugar. Scoop in the the prepared chocolate mixture into ramekins bowl, just half of its size.

* Bake them at 200C for about 10-12 mins. Longer you bake, you wont get lava. the cake rasies well and you would get cracks on top of the cake.

* Serve with Vanilla Ice-cream for the Divine Experience. or dust with powdered sugar and serve with fresh cut fruits.

Notes:

- I used Margarine and it was good. and this is the first time iam using margarine.
- I reduced to 2 eggs from 3 eggs as mentioned in recipe. yet, it was Good.
- Cake can be refrigerated and later microwave it for 20 seconds at high power, before serving.

I love Brownies but folks at home dont, so baking brownies becomes rare. I baked these low fat brownies for Divya's Brownie Event. Iam making into the event at last minute desperately, as i very badly missed not being part of her Very Famous Best Chocolate Cake Event.

Fudge Brownies

I just want to share 2 Brownie tricks. one is Brownie takes less flour compared to Cakes. second is cooling the baked brownie for atleast 40 minutes is a must. These Low Fat Brownies dont ask for Butter, but still you will never miss butter in brownie. The Guilt part is the Egg's.

Recipe from GoodHouseKeeping's Cakes and Bakes.

Ingredients:

Makes about 12-16 brownies

Olive Oil / Sunflower Oil - 50 ml / 2oz.
Dark Chocolate - 250 gms
Egg's - 3
Demerara Sugar - 150 gms / 5 oz
Vanilla extract - 1 tsp
All Purpose Flour - 75 gms / 3oz
Baking Powder - 1/4 tsp
Cocoa Powder - 1 tbsp
Butter - 1 tsp for Greasing the Cake Tin.

Method:

Pre- Heat the oven at 180C. and Grease the Cake Tin with Butter and set aside.

Melt the Dark Chocolate by placing in Microwave for 30 seconds at 900W. or melt the chocolate by double boiler method and let the chocolate cool after melting.

Break the Eggs into a large bowl, add Oil, Sugar, vanilla extract and whisk well.

Sift the Flour with Baking powder and cocoa powder and mix the flour to the large bowl which had egg-oil whisked. Mix them all together.

Mix Melted Chocolate to the bowl. mix with a wooden spoon. mix very lightly, as the chocolate thickens up the mix so quick. Transfer the mix to the Greased pan.

Place the Pan on Oven and Bake it for 20 minutes.
Once baked, check the brownie by inserting a toothpick close to the centre of the brownie , it comes out clean.

Cut the Bownies, while its still on the pan. and let them cool for about 40 - 60 minutes in the pan.

Remove the Bownies from the Pan and Serve with Ice-Cream.

Low Fat Brownies

To Store, wrap the brownies with cling film and store it in air-tight container.




I know i went missing here for a month. I needed the break from this webworld, now i can say proudly that iam not addicted to blog or FB or WEB in total :) apart from funny thoughts flooded, i gave treat to my Depression, by making these Eggless Chocolate Muffins. This is Superb eggless recipe, suggested by Sharmilee. Its Easy, you will know when you prepare it.

Eggless chocolate cupcakes

Recipe Copied from my Eggless Moist Chocolate Cake. its a Fool Proof Recipe I tell You.
Baking Time : 25-30 mins, Yields 18 muffins.

How to Prepare Eggless Chocolate Muffins?

Wet Ingredients:

Cold Water - 1 and half cup
White Vinegar - 1 and half tbsp's
Brown Sugar (or) Sugar - 1 cup
Olive Oil (or) Canola Oil - 6 tbsp's

 Mix the above Wet ingredients in a bowl together. Let the Sugar Dissolve well.

Dry Ingredients:

All Purpose Flour / Maida - 1 and half cup
Cocoa Powder - 1/4 cup
Baking Soda - 1/2 tsp
Salt - a small pinch

Sift the flour and cocoa powder along with the salt and baking soda for atleast 3 times,

So that no lumps of cocoa powder / all purpose flour are there and also the baking soda is mixed well with the flour.

Mix the Dry Ingredients along with the wet ingredients and stir slowly. make sure no lumps are formed in the mix.

Pre-Heat the Oven to 180c and line the Muffin tray with Muffin Liners.

Pour the mix on to the Muffin tray and bake it for 25 mins exactly. Check whether muffins are baked, by insering a toothpick in the centre of a muffins, it should come out clean, else bake for another 5 mins.

Remove the Muffins from the tray and cool them on wire wrack. Let them cool down for 10 minutes.

 Put the Muffins in Refrigerator for about 2 hrs and serve chilled.

Eggless chocolate muffins

To make Icing:

Mix the Icing sugar (5 tbsp's) with warm water (1 tbsp) and beat well. spread the icing over the muffins and serve.

Notes:

Lemon Juice can be used instead of White Vinegar.

Brown sugar works perfect than Plain Sugar.

I feel cooling the muffins makes it taste better.

I found this Silky Chocolate Pudding from Smitten Kitchen. i prepared this pudding for my apartment kids and they loved it so much. they came to me one day asked me to prepare again and saw me live preparing the pudding and they went home and prepared just like i did. One of the kid's Grandmom was so impressed and asked me, where i found the recipe? believe me the kids prepared the pudding more than me and even they brought me what they made to taste, it was so so Gooood!

Eggless Chocolate Pudding

Ingredients: Recipe for 5-6 servings

Dark Chocolate -  1 and 1/4 cup (or)  6 oz.
*Coccoa powder can also be used instead of dark chocolate. if so, Coccoa Powder - 1/2 cup

Milk - 1/2 litre (3 cups)
Vanilla Essence - 1 tsp
Salt - a pinch
Sugar - 1/2 cup
Corn Flour - 1/4 cup

Method:

Use Double Boiler or Boil water in a big bowl and fit another empty bowl over the big bowl. simmer the flame once the water starts to boil.

Grate the Dark Chocolates or cut them into small pieces.

Grated Dark Chocolate

Add Corn Flour, salt a pich, Sugar to the empty bowl and mix well. If using Cocco powder, add it too. slowly add milk one cup at a time and mix well with a whisk. see to that no lumps are formed.

Keep Stirring with the whisk in slow flame for upto 5-8 mins till the mix gets thicker, or it should coat the spoon.

Once the mix got thickened, add Dark Chocolate and mix well with the whisk. the chocolates melts and mixes well with milk and corn starch. once it all turned chocolatey, remove from the bowl and add vanilla essence and mix. If you wish you could strain the pudding in the stage, if you feel some lumps in the pudding.

Let the Pudding cool and transfer them to small cups. cover them with a cling wrap and refrigerate for upto 2hrs. Serve them chill.

Chocolate Pudding

Adding Chocolates or coccoa powder can be skipped and the pudding can also be enjoyed plain as Vanilla Pudding. It Tastes Good!

Home made Cookies

Okay, what's my New Year Resolution? Its not just for this Year, as i think, it will be in long term, for the next decade atleast. One is to feed the Family Healthier way. Second, I should Think several times before taking important decisions. Third, to enjoy every bit of Life.  in simple, iam trying to correct the mistakes of last decade.

If you ask me what happened to my last Year's Resolution, Yes i was able to follow it for 6 months atleast.
Last Year's Resolutions were, not to expect other hands for help.( it purposely meant, that i should do all my house-held work without maid). I survived without domestic help for 6 months. later i was pushed to have a helper, as hubby went abroad, and i needed someone to looks after the kid, when i had to look after outside work.

Double Chocolate Cookie

Next was to reduce maida, oil in cooking.  and i have reduced the oil consumption from 1 and half litre a month to 1 litre. but could'nt reduce maida, as iam experimenting on baking mode, maida/APF becomes  must for the experiments.

Coming to the Chocolate Temptations Cookies, I tried it out, from my Cakes and Bakes Book. I just followed the recipe. It turned out fabulous and vanished in just two days. My Son and I loved it!

Ingredients: (yields 24 - 30 cookies)

Butter - 1/2 cup

Semi-sweet Chocolate / Dark Chocolate - 225 gms

Chocolate Chips - 50 gms

Strong Coffee Powder - 1 tsp

Eggs - 2

Demarara Sugar - 3/4 cup

All Purpose flour / Maida  - 1 and 1/3 cup

Baking Powder - 1/4 tsp

Salt - a pinch

Almond extract - 2 tsp

Hazelnut, Brazil nuts, walnuts- 2/3 cup (optional)


To Decorate the Cookies:

40 gms of dark chocolate

Icing Sugar - 2 tbsp

Butter - 1/2 tsp

Milk - 1 tbsp


Method:

1. Pre-Heat the oven to 180C. Line a Tray with Butter Paper and Grease it with butter.

2. If you have Double Boiler, Melt the 225gms of chocolate, Butter  along with Coffee.
               (or)
Boil 2 cup's of water in a bowl and simmer it.  find another fitting bowl, that could sit over the boiling water bowl and place it over the boiling water bowl. add 225gms of dark chocolate, 1/2 cup butter and Coffee to the bowl and melt them together.

3. Beat 2 eggs in a bowl until fluffy. whisk in sugar gradually till the  mix, turns thicker. Remove the chocolate melted, and add to the egg-sugar whisked. Mix them all together, till they are mixed well and becomes Thicker.

4. Sift the Floour, Baking powder, salt  into a bowl. add the melted chocolate-egg mix to the flour and give a mix with spatula or wooden spoon. add chocolate chips, almond extract and nuts and give a mix to get the cookie dough.

5. Spoon in the cookie dough over the greased butter paper and bake in the pre-heated oven for 15-17 minutes. Transfer the cookies to wire-wrack once its baked.

To Decorate the Cookies:

With the help of double boiler or in double boiling method(refer step 2), melt the chocolate, butter and icing sugar together. once the chocolate gets melted and mix turns thick, add milk to make the mix thinner.
Pour the mix to a Piping bag and pipe lines over the cookies.

* I used Milk cover instead of Piping Bag.
* I did a foolishness of using Demarara Sugar instead of Icing sugar and it did'nt melt and struck in between while piping chocolate lines.



I am a brownie addict. whenever i buy dark chocolate bars, i turn them into delicious Bbownies. Last week, it was a brownie week for me, as i tried two variety of brownies, one was low fat banana brownie and the other is this almond brownie. banana brownie, varied from the usual ones, for me, it tasted much like banana-chocolate halwa!!

But this almond brownie came out so perfect. I could proudly say, this is one of my best from my baking experiments.  now this brownie is attending Brownie event at divya's place. This is such an easy method, coming to the recipe.

Brownies
 
Recipe for 12-14 squares


Dry Ingredients:

All Purpose Flour - 1 cup / 200gms
Baking Soda - a small pinch
Salt - a small pinch
Sugar - 3/4 cup
Cocoa Powder - 3 tbsp's


For Wet Ingredients:


Dark Chocolate - 150 gms
Butter - 75gms
Eggs - 2
Milk - 1/3 cup
 
Almonds - 15 (Grated)

How to Prepare?

 
Pre-Heat your Oven at 180c / 330F. for 10 minutes. Line a Baking Bowll with a aluminium foil sheet or butter paper.

Get ready with your Double boiler or Heat 3 cups of water in a bowl, let the water boil. Simmer the flame.
Place another fitting bowl, with Dark Chocolate and Butter over the bowl of hot water.


Let the Chocolate and Butter Melt together and turn into a chocolate sauce like one. Switch off the flame and remove the bowl.

Break an egg to the chocolate - butter sauce and mix well. break another egg and mix well.


Mix all the Dry Ingredients together and sift them twice.

Now add the mixed Dry Ingredients in 3 batches to the chocolate-Butter-Egg Mix and mix with a wooden spoon. add little milk, if the consistency of the batter is too thick. Add Greated Almonds and give a mix.


Pour the mixed batter to the lined baking bowl. Top them with some grated Almonds.


Bake at 180c for about 40 - 45 mins. till a toothpick inserted in between the centre and the corner of the bowl comes out clean. Remove the Baking bowl and dont disturb it for 10 minutes.

After 10 mins. Remove the Brownies along with the foil sheet and cool them on a board or wrack. Allow the Bownies to cool for 45 minutes to 1 hr. Cut the Brownies into squares or bars and store them.

What I learned from this attempt?

- Need not cream the butter and sugar. and also need not beat eggs into the mix. all these yields a crumble brownies.
 
- Allow the Brownie to cool down completely with patience, and then cut them into squares.

-Never over bake the brownies.

Baking Cake is very easy, when you know, how the cake batter should be in consistency, before putting into oven for baking. and the next very important point is to measure and add the ingredients as in the recipe. If you follow these simple two tricks, you can master the Cake Making in couple of trials. Chocolate Cake should be moist, it should have red velvetty texture-that comes as a chemical reaction, when the cocoa powder mixes with the sour thing like vinegar or lime juice or Buttermilk.


Basic Chocolate Cake

My Son was asking me to bake a cake for him from last month. as me and my son had cough, i postponed it and finally baked the cake last Sunday. We enjoyed the cake much with frosting, which i prepared with dark chocolate. Chocolate Cake with Dark Chocolate Frosting was so excellent. I need not tell, as you may also agree when you look at the above picture.


Chocolate Cake Slice with strawberries



While Googling for a Good Chocolate Cake, i came across a term / ingredient Cake Flour. Iam very sure, if i have to search for it in Chennai, it will take atleast 2 months for me, and also its not 100%, that i could able find it. so the next search went as Substitute for Cake Flour. and there my baking teacher Site Joy of Baking, had a solution for it and it said, to mix Corn flour with all purpose flour / Maida in 3:10 ratio. i added One cup of all purpose flour and 2 tbsp's + 1/4 tsp of Corn Flour and used as Cake Flour.

                                                            
                                                                  Basic Chocolate Cake

Ingredients:

    Chocolate Cake Slice with strawberries
  • All Purpose Flour / Maida - 2 Cup's
  • Corn Flour - 2 tbsp's + 1/4 tsp
  • Baking Powder - 1tsp  + 1/2 tsp
  • Baking Soda - 1 tsp + 1/2 tsp
  • Cocoa Powder - 1/2 Cup
  • White Sugar - 1 cup
  • Light Brown Sugar - 1 cup
  • Egg 's - 2
  • Butter - 1/2 Cup
  • Buttermilk - 1 Cup
  • Hot Water - 1/4 cup
  • Vanilla Essence - 1 tsp

Method:

Mix All purpose flour and corn flour together and Sieve the flours with baking powder and soda for two times and mix cocoa powder to it and keep aside. Powder a cup of White Sugar and keep aside. Measure a cup of Light Brown Sugar and Keep aside.

Have a large glass bowl or aluminium vessel to beat and mix all the ingredients. First Beat the Butter at room temperature for a minute. i used my hand whisk, so i will be telling what i did. Then add powdered sugar to the Butter and beat it for another 2 to 3 minute's. add Light Brown Sugar and Beat it further. it becomes hard at this point and so i just mixed the brown sugar to butter sugar mix. Now Break in a Egg and beat well. Break in another egg to the mix and beat well. add vanilla essence and beat well.

Now the trick on recipe comes. add little Flour mix to the bowl and mix with a wooden spatula or wooden spoon. add little buttermilk and mix, alternatively keep adding the flour and buttermilk and keep mixing till the flour mix is over. Finally add Hot water little by little to the Cake Mix and mix slowly and evenly. see to that no lumps are formed. See to that the Cake Mix consistency is Light, Creamy and Very Fluffy. (Remember, this is what i mentioned above in the very First Line, the consistency of Cake mix is important, also the exact measurements of the ingredients).

Grease a Pan with little butter for baking the Cake. Pre-Heat the Oven at 175C / 350F for 10 minutes. Pour the Cake mix to the Greased Pan and Bake the Cake for about 45 mins to 50 minutes, till a toothpick inserted to the center of the cake comes out clean.

After Baking the Cake, remove it from the Oven and let it cool down for 10-15 mins and then you can slice or do frosting.

Ingredients:

Dark Chocolate - 1/4 cup
Butter - 1 tbsp
Milk - 1/4 cup
Powdered White Sugar - 1/4 cup

Method:

Melt the Butter and Dark Chocolate in a Pan in very slow flame. add milk and keep stirring. add sugar and keep stirring. The frosting starts thickening after 3-4 minutes and you can remove the pan from flame, when the frosting starts thickening with bubbles.

Apply the frosting over the Cake. and Serve a slice with a scoop of  vanilla ice-cream for a Perfect Treat:)

First, I have to mention Sharmilee, for tempting me to try this eggless cake by sending her Cake picture. Thanks Dear! Yesterday my very depressed mind needed chocolate and when i opened my fridge, nothing other than cocoa powder was chocolaty there. and there sharmilee's cake pic came before my eyes, and i proceeded to bake this super moist chocolate cake with the recipe from here.

Eggless Chocolate Cake

This cake is made with Vinegar and its tough to spot it on tasting. Though there may be some hint of vinegar, when you taste soon after baking, the next day after refrigerating, the light hint also vanishes. I much liked the cake, the next day after refrigerating. my recommendation is to refrigerate the cake first and serve next.

How to make?

Cold Water - 1 and half cup
White Vinegar - 1 and half tbsp's
Sugar - 1 cup
Oil - 6 tbsp's

Mix the above wet ingredients along sugar in a bowl together. Let the Sugar Dissolve well.

All Purpose Flour - 1 and half cup
Cocoa Powder - 1/4 cup
Baking Soda - 1/2 tsp
Salt - a small pinch

Sift the flour and cocoa powder along with the salt and baking soda for atleast 3 times,
so that no lumps of cocoa powder / all purpose flour are there and also the baking soda is mixed well with the flour.

Mix the Dry Ingredients along with the wet ingredients and stir slowly. make sure no lumps are formed in the mix.

Pre-Heat the Oven to 180c and Grease a 7 by 5 inch pan with few oil drop's.

Pour the mix on to the greased pan and bake it for 45 mins exactly. Let the Cake cool down for 10 minutes.

Put the Cake in refrigerator for about 2 hrs and serve chilled along with Whipped Cream frosting.

I felt the cake tasted little like brownie, i loved and enjoyed this cake very much.

It was one of my wish to participate in a Blog Posting Marathon. finally nearing the end of the year, its fulfilling thru Nupur's Recipe Marathon. Here I Run with Muffin's....

I wanted to Bake some Goodies for Christmas, as i was confident on muffins, went ahead with it. i made both classic Vanilla and choco-walnut muffins. both turned out extremely Good. I did the icing with the Pilsbury vanilla and chocolate icing. it gave a nice look and cream to the muffins. I enjoyed the icing decoration part very much. I just got one muffin to taste. 6 went as gifts, the kid had one, hubby had 4. the muffin i tasted was soaked in Capsicum Sambhar by my kid. ( he should have thought it as Vadai i guess:) )

As i did my schooling in Christian institutions, Christmas Celebrations, Crib's, Santa Claus, Prayers, Colourfull Lighted Hanging Star, Christmas Tree were all not missed every year. But after schooling, i never had a chance to enjoy the christmas spirit. Now again Christmas Spirit got me this year, after Christmas Celebration's at my Son studying School.

Now Coming to the Vanilla and Chocolate-walnut muffin story...

Ingredients: ( 12 Big Muffins)

All Purpose Flour / Maida - 275 gms
Butter - 150 gms
Sugar - 1 and half cup
Egg's 4
Vanilla Essence - 2 cap full (2 tsp's)
Baking Powder - 2 tsp
Baking Soda - 2 tsp

Dark Chocolate Bar - 75 gms / Cocoa Powder - 4 tbsp's
Walnut - 7 (chopped into small pieces)

Method:

Pre-Heat the oven to 180c for 10 minutes. Grease the Muffin Pan's with some butter and set aside.

Mix the Flour with Baking Powder and Baking Soda. set it aside.

Powder the Sugar and keep aside.

Beat the Egg's and keep aside.

Add the powdered Sugar to the Butter and Cream it well. I use my hand whisk and whisk for atleast 3-4 minutes, till i notice a colour change of the butter from light yellow to white.

Add the flour to the creamed butter- egg mix and slowly mix it up with a wooden spatula or wooden spoon.

Now add the Egg's and mix the flour well with the other ingredients. add vanilla essence and mix well.

If your flour batter is so tight, add few spoons of warm milk and mix well. Pour the batter to the greased muffin pan's and bake them for 25 mins at 180c. check the muffins, whether its cooked, by inserting a toothpick on the muffin comes out clean. Bake it furthur for 5 - 7 mins if not cooked.

With the Remaining Batter, add the melted chocolate and chopped walnuts. mix well and spoon in on the muffin pan's and bake them for 25 mins at 180c. sprinkle some crushed walnuts over the muffin batter before baking.

Let the Muffin's cool down and decorate it with icing. I used Pilsbury Vanilla and Chocolate Icing. had some chocolate vermicelli and decorated the muffins with that too.

Now these muffins are jingling all the way to asankhana's Jingle event.

Blogging Teaches me a Lot. Iam trying to bake few goodies for my home nowadays. and this brownie is one such attempt. I have posted my first brownie recipe here. This time, it tasted more like a brownie, but i could'nt get fudge brownie's, i should try making it next time.

Chocolate Brownie

Ingredients: ( yields 12 sqaures)

  1. Dark Chocolate - 350 gms / 12 oz (Morde Dark chocolate i used 1 and half bar)
  2. All Purpose Flour / Maida - 1 cup / 6 oz
  3. Butter - 100gms / 3.5 oz
  4. Castor Sugar / Powdered Sugar - 1/2 cup / 3 oz
  5. Walnuts - 1/2 cup (chopped)
  6. Egg's - 2
  7. Baking Powder - 1/2 tsp
  8. Baking Soda - 1/2 tsp
  9. Salt - a pinch
Brownie's with Tea

How to Prepare?


1. Melt the Dark Chocolate by double boiling method or microwave it for 90 secs in Microwave High.

2. Powder the Sugar by running the sugar in your mixer grinder. (do not powder very finely)

3. Bring the Butter to Room Temperature, by immersing the Butter with its carton in a bowl of water. replace the water twice or thrice, whenever it gets chilled. It takes around 10 minute's.

4. Now Beat the Butter with Sugar, using a hand whisk for about 3 minutes atleast.

5. Whisk the Egg's with Yolk's and keep aside. I use my mixie to whisk the egg's. its done in a minute.

6. Sift the Flour with Baking Soda, Bkaing Powder and pinch salt. Sift the flour for atleast three times.

7. Chop the Walnuts and keep aside.

8. Pre-Heat the oven for 10 minutes at the temperature of 180 C. / 350 F.

9. While the oven get's Pre-Heated,

Add the Melted Chocolate to the whisked Butter-Sugar Mix and blend the chocolate with a spatula.

Add the Whisked Egg's to the Chocolate-Butter-Sugar mix and mix well.

Also add the sifted flour and mix well. Now add the chopped walnuts and mix well.

10. Pour the Flour+Egg+Butter+Sugar mix to a Greased Baking Bowl. Bake in the Pre-Heated oven at 350F for about 20 minute's.

11. Cool the Baked Brownie's for about 30 minute's and then cut them into sqaure's.

Cooling Down

* No Need to check for cooked, by inserting a tooth pick and ensuring it comes out clean.

Brownies are my all time favorite dessert dish. a slice of brownie topped with a scoop of vanilla ice cream and chocolate syrup drizzled over, makes me go crazy. This time i tried egg less brownies. i substituted egg with condensed milk and orange juice. that is a wrong combination of mixing condensed milk and orange juice, as the milk gets curdled. yes it curdled a bit, but once i added the flour, everything went fine and it resulted in yummy and delicious brownies. I  managed to click step wise pictures, but could not click few steps. excuse me for that.


You can skip the orange juice and add water for the measurement told, along with the dark chocolate while melting it. i will explain this in step wise pictures, so you can get a clear idea.


When you are baking egg less cakes or brownies, the recipe either calls for Milk, condensed milk or butter milk. and also vinegar or any other citric based one like orange juice is added. actually the citric when mixed with baking soda and baking powder(its a chemistry stuff) gives you a fluffy soft cake. 

Ingredients:

1 cup all purpose flour / Maida
1 tsp baking powder
1/2 tsp baking soda
3/4 cup of Dark chocolate
30 ml of water
65 ml of Orange juice
1/2 cup(116 gms) of Butter
3 tbsp of powdered sugar
200 gms of Condensed milk
5 almonds or walnuts  finely chopped

Method:


Prepare for double boiling, to melt the chocolate, by heating a larger vessel with water up to its 3/4 th level and fit a small vessel into it. Chop the dark chocolate and measure it to exact amount of 3/4 cup. drop in the chopped dark chocolate and melt it in slow flame. add 30 ml of water so that the chocolate on melting do not stick to the pan and comes out as a smooth chocolate sauce. (if you are skipping orange juice add 95 ml of water).


Mix flour,baking powder and baking soda together for at least thrice, so that they all get mixed together evenly.


Measure half cup of butter, reserve a tbsp of butter from it for greasing the baking tin. Cream half cup of butter and 3 tbsp's of powdered sugar with a electric mixer or whisk for about 3-4 minutes in a mixing bowl till you get a smooth pale and creamy mixture.


Look at the creamed butter and sugar mix, how pale and creamy it is? next add 200 gms of  condensed milk to the mixing bowl, i poured about half of my condensed milk tin. again beat this mix till they mix well.


Pour in the orange juice and melted dark chocolate to the mixing bowl and beat just for a second. then add in the sifted flour( i forgot to click adding flour) and beat well, till the flour gets mixed. Line a 10" inch pan with aluminium foil sheet and grease with butter on the sides and bottom of the tin. Pour the mixed batter in the mixing bowl to the greased tin evenly. add in the chopped nuts on the top( i forgot to click this step as well). tap the tin on kitchen counter top once so that air bubble's escapes.


Pre-heat the oven to 180C for about 10 minutes and bake the brownie for about 40 minutes at 180C till a tooth pick inserted to the center of the brownie comes out clean. once done, remove from the oven and let it cool on wire wrack for about 10 minutes, then make them into slices and serve warm.

Notes:

1. I used a small baking 8" baking tin, which made my brownies shrink in the middle of the pan, so use a 10" inch pan.

2. If you want to add egg's, then add 2 big egg's in place of condensed milk and add 1/2 cup of powdered sugar ,while creaming butter and sugar.
