It's year after year i am complaining, how hot it is in chennai. This year water scarcity joins the club. so you should imagine my state(TN). Let's hope this coming monsoon gives enough rainfall!!

Watermelom Ginger Juice
 
Having a slice of water melon during summer is such a relief. You will feel chill inside on consuming, but you will be standing under the sun!! When i did my college in chidambaram, we had to cycle 2 kms from hostel to college, then return for lunch and then cycle back to college. We always manage to have a slice of water melon on our way to hostel for lunch.
 
Watermelon Juice

 In summer day's, i do not like cooking/eating, and i can just survive on water melon, tender coconut water and with curd rice. that's what we yesterday did.

Watermelon juice served with pudhina

Hubby suggested me to add a piece of ginger in the juice. believe me, i did not get  the taste of ginger in juice. so why not hide a piece of ginger in your glass of watermelon juice herein? Mint gave a refreshing look to the juice. i just served with mint sprig. you can also add 5 mint leaves while blending the melon.

                                                               WATERMELON  JUICE

makes - 2 glasses
preparation time - less than 5 mins.

Ingredients:

Water Melon - 2 cup's (diced)
Ginger - an inch sized
Ice-cubes - 3
Mint Sprig - 2 to serve

Method:

Put the diced water melon, with or without seeds, a piece of ginger, ice-cubes in your mixie jar or in your blender, grind them for about 15-20 seconds. strain the juice out. serve chilled and see how your tummy enjoy's this chilled drink!

Notes:

1. Either you can discard the seed's before you blend the melon. i prefer blending the water melon and then to strain the juice out. This works well for kids.

2. If using already refrigerated water melon, you need not use ice-cubes seperately. also there is no need for sugar and water to be added while blending.

 

I love shopping online at jabong. When bharathy asked to send entries for her spicy recipe event, i wanted to prepare a recipe with red chilli, just to suit her blog logo! i tried chilli bread sticks, chilli-mint flavored paneer. no dish looked sexy and hot with dry red chilli!

Hot Chocolate drink

I still do not know, whether bharathy will accept my entry or not, as the deadkine for the submission  just closed yesterday.

Chilli Hot Chocolate

serves - 3
preparation and cookin time - less than 5 mins

Ingredients:

Dark chocolate - 45 gms
Milk - 250 ml
Red chilli flakes - 1/2 tsp
Cinnamon - 1" inch size stick
Sugar - 4 tsp

Method:

Heat Milk in a pan, add dark chocolate and cinnamon stick and keep stirring, till the chocolate melts.
add sugar and mix well. bring the milk to boil and reduce the flame. let the chocolate milk simmer for about 1 or 2 minutes. finally remove the cinnamon stick and add red chilli flakes. remove from the flame. Serve hot to your loved ones.
 

Chilli Chocolate drink

Note:

To prepare dry red chilli flakes, take 3 o 4 dry red chilli and remove the stalks of the red chillies. grind coarsely so that you get chilli flakes.

Just a pinch of chilli flakes will do for a serving.

I am not a coffee person till last year. I started taking coffee while i prepare filter coffee for my domestic helper. who can resist filter coffee? I  do not know to prepare coffee during my hostel days. my friends help me out with decoction and mixing. 



I remember once i had to tell on how to make filter coffee in my class 11 for english viva. when i told, "mix coffee powder with hot milk", everyone in the class started to laugh. When my English teacher started to yell at me, i was just blinking, as i thought that i told the right one. but when the other girl started to tell, i realized, oh there are so many steps in it. which i finished in just one step. sorry to bore you with my memories. 



So with this hot climate, i wanted to have cold coffee. i looked many sites, finally this chocolate coffee attracted me. chocolate y coffee is what i arrived at. 


To prepare chocolate sauce:


Ingredients:


  • Dark chocolate - 25 gms / 1/4 cup
  • Butter - 1/2 tbsp
  • Sugar / brown sugar - 3 tsp
  • Salt - a small pinch
  • Honey / Corn syrup - 1 tsp
  • Milk - 3 tbsp

Method:

  1. To prepare chocolate syrup, it should be cooked using double boiling technique. so never cook chocolate in direct heat as it may burn the chocolate. 

  2. For double boiling, take a wide vessel filled half with water. boil the water. take another medium sized bowl that could sit inside the wide vessel. 

  3. Put the dark chocolate, sugar and milk to the medium sized bowl sitting over the boiling water on a wide vessel. reduce the flame to low and start stirring with a wooden spoon till the chocolate melts and blends well with milk.

  4. Once the chocolate had melted, add honey and butter. keep stirring and in less than 2 minutes the chocolate sauce get thicker. on cooling it may get still thicker, so take it off, while the sauce starts thickening.

  5. The chocolate sauce will be looking shiny and you can feel it getting thickening. remove it at that point.

I prepared the chocolate syrup a while back and totally forgot.  here is when i prepared last.

To prepare cold chocolate coffee

Ingredients:
  • Chilled milk - 1 tall glass (boiled and chilled)
  • Instant coffee powder - 2 tsp  (or)
  • Filter Coffee decoction - 2 tbsp
  • Cocoa powder - 1/2 tsp
  • Sugar - 2 or 3 tsp
  • Chocolate syrup - 1 tsp

Method:

  1. Take a serving glass and drizzle the chocolate syrup into it to create patterns. tilt the glass so that syrup flows and the patterns get set.

  2. In your mixie jar, add milk, sugar, coffee powder or decoction, cocoa powder and blend well.

  3. Now pour the cold coffee into the chocolate syrup drizzled glass and serve chilled.




Lemon always refreshes with its Yellow Colour. I love to have lemon syrup bottle refrigerated for summer season. This season was also no exceptional. What special is, this time i prepared my own lemon syrup and stored it up. I also love lemon Soda. Its the best for Pitham(pitta dosha). I will sure make a post on how i make lemon soda soon.

Lemon


First prepare lemon syrup and then you can add water to it to turn it into lemonade. lemon syrup is ideal, if desired to store for long time.

(measurement for 5-6 glasses of lemonade)
Ingredients:

4 Lemons
1 cup Sugar
1 cup water
4 and 1/2 cups of water
1 tsp of lemon zest (optional)

Method:

Preparing sugar syrup is the first stage. boil a cup of water, add sugar to it, dissolve it. let it boil for 4 minutes till it comes rolling boil and it attains single string consistency. let it cool.

Cut the Lemons and squeeze the Juice out.

Mix the Lemon Juice with the cooled sugar syrup.  add lemon zest to the syrup and give a good mix. this is how Lemon syrup is prepared.

Lemonade:



Iced Lemonade

* Add 2 tsp of Lemon Syrup to a glass of chilled water to get Lemon Juice/ Lemonade.


* Mix 2 tsp of Lemon Syrup with a glass of Soda and few ice cubes to get Lemon Soda.


Lemonade

 or to store as lemon juice, on preparing lemon syrup, add four and half cup's of water to the lemon syrup and mix well and store in a pitcher or Jar. This can be stored in fridge. serve the lemonade chill.

Notes:

1. The ratio for Lemonade is Sugar : Water : Lemon Juice is 1:1:1

2. Lemons should be at room temperature or warmer before the juice is extracted.

3. To warm the lemon either put them in the microwave for 40 seconds at high heat or put the lemons in hot water for 2 minutes.

4. For extra flavor, add some lemon zest to the lemon syrup.
