There are many ways to prepare greens. I remember my great grand mom cooking different types of kootu with keerai. I tried making mulai keerai poriyal along with its stem and added moong dal for a variation. we liked it a lot. It tasted good when mixed with rice and little ghee. The trick is to use only the tender part of the stem rather hard stem. Then you should first saute and cook the stem before adding the greens. this way, we can cook the greens and stem evenly. Do try this nutritious as well as healthy poriyal. You will like it for sure.

Mulai keerai thandu poriyal


Ingredients:

Mulai Keerai - 1 bunch
Moong dal - 2 tsp's
Grated coconut - 2 tsp's
Onion - 1 finely chopped (optional)
Salt to taste

For tempering:

Oil - 1 tsp
Mustard - 1/2 tsp
Split urad dal - 1/2 tsp
Dry red chilly - 2 (broken)

Method:

Soak moong dal in water for about 30 minutes. drain the water from moong dal and set the dal aside.

Clean and seperate the mulai keerai from its stem. discard the bottom part of the stem, which will be hard.
just select the tender stem, wash it thoroughly and chop them finely and set aside.

Wash the mulai keerai leaves seperately twice or thrice and chop it finely and set aside.

Heat a pan, add 1 tsp oil, add mustard. let it splutter. then add split urad dal and broken dry red chilly. saute and add finely chopped onion and saute it till it turns translucent.

Next add the finely chopped stem and mix well with the onions. let the stem get cooked for about 2-3 minutes. Then add the finely chopped greens and mix well. soon the greens get cooked in a minute or two.

Finally add the drained moong dal and the grated coconut. Mix well.

Remove from the flame and transfer the poriyal to a serving bowl.

Serve along with Rice and Sambhar.

Notes:

Adding onion and moong dal is optional.

Never cook the greens for more than 5 minutes. it may loose all the nutrition. so just let 2-3 minutes and remove from flame.




I always cook vazhakkai roast and vazhakkai kuzhambu. For a change i wanted to try podimas recipe. i have already made potato podimas and we like it lot. As i pack lunch for my hubby and to my son, cooking a proper meal with sambhar, rasam and poriyal are shifted to weekends as pulao,chapathi and sabzi took over on weekdays.

Ingredients:

Raw banana / Vazhakkai - 1
Oil - 2 tsp's
Mustard - 1/2 tsp
Split urad dal - 1 tsp
Green chilli - 1
Ginger - 1 ' inch size
Grated coconut - 1/4 cup
Turmeric - a pinch
Lemon juice - 1/2 tsp


Method:

Pressure cook the raw banana for up to 2 whistles exactly.

Remove the skin and Grate it and set aside.

In a Pan, heat oil, add mustard and let it splutter, add urad dal and let it turn into golden color. then add finely chopped green chilly and ginger to the pan and roast.

Then add the grated raw banana to the pan and mix well.

Add salt and turmeric powder and mix well.

Add add the grated coconut and give a mix.

Finally add 1/2 tsp of lemon juice and mix. garnish with curry leaves and corriander leaves. Transfer the podimas to a serving bowl.

Serve along with rice, sambhar and rasam.




This is the recent poriyal craze going on at home. just love this kathirikai podi curry, as it goes well with rasam or sambhar or any variety rice. its simple and easy to prepare.

You can prepare it in three different ways. yes i have tried three different ways just in the past one week! i will share two ways here, one is with less oil and the other is sinful varuval kind. though it can be prepared in three ways, basic podi is same, and it differs in either sauting or frying or steaming the brinjal's.

Ingredients for podi: 

                            got this moram after seeing it on raks kitchen. now i love to use it!

4 or 5 dry red chilli
1 tbsp chana dal
1 tsp dhania
1 tbsp peanuts
1 tbsp sesame seeds
1 tbsp grated fresh coconut or kopparai(dry coconut)

Dry roast the above ingredients one by one in medium flame till they turn into golden color. once roasted, cool them down and grind into a coarse powder.


If you have added dry coconut, you can store the podi in fridge and use it up later. you can also prepare vazhakkai podi varuval. so prepare the podi  in excess and store in an air tight container, which could be good for at least a week.

Kathrikai podi poriyal: ( with just 1 tsp oil )


Purple brinjal - 10
Oil - 1 tsp
Curry leaves - 1 sprig
Tamarind - a small lemon size
Podi - 3 tbsp
Turmeric - 1 tsp
salt to taste

Method:

Trim the tails of brinjal and cut them lengthwise. soak the tamarind in 1/2 a cup of water and squeeze out the pulp. heat a pan, add the tamarind water and brinjal's. let the brinjal get fully cooked in it and the water should be absorbed by the brinjals. at this stage, add salt to taste, turmeric powder and the podi. mix up all together. add a tsp of oil and mix them all. leave the brinjal's  in slow flame for about 2-3 mins. add curry leaves & remove from flame. serve with hot rice. Tastes best when served with mor kuzhambu or rasam.

Kathrikai podi varuval: (with 4 tbsp's of oil)



Purple brinjal - 10
Oil - 3 - 4 tbsp
Curry leaves - 1 sprig
Podi - 3  tbsp
Turmeric - 1 tsp
Chilly powder - 1 tsp
salt to taste


Method:

Trim the tails of brinjal and cut them lengthwise. Heat oil in a pan, add the brinjal's and fry them till they are almost cooked(3 - 4 minutes). add salt to taste, turmeric, podi and chilly powder. mix up well. let the brinjal's get wrapped up well with the podi. Let the brinjal fully cooked in low flame for about 2 or 3 minutes. add the curry leaves and remove from flame. serve hot.

I served with arisi paruppu sadham, which was a delicious combo!

I liked the version with less oil, as its guilt free. but you all know, which one will taste good. i was talking about the third version of steaming isn't it?. you can refer bharathy's spicy chilly.




I just love this veggie from my childhood. Mostly I prepare sepankilangu sambhar. I recently spotted these arbi fry on a buffet at Green Park. I loved it most and now i re-created the dish, just as it was. That’s why I tell you, only a good eater can be a good cook!




Ingredients:

Taro root / Arbi  - 200 gms
Onion – 1 (finely chopped)
Garlic – 2 cloves (finely chopped)
Curry leaves – 1 sprig



Spice Mix:

¼ tsp Turmeric powder
2 tsp chilli powder (I used  aachi kulambu milagaai thool)
1 tsp dhaniya powder
Salt to taste



For Tempering:

Oil – 3 tbsp’s
Mustard – ½ tsp
Asafoetida – ¼ tsp
Cumin – ¼ tsp
White sesame seeds – ¼ tsp



Method:

      Wash the taro root cleanly and boil it in about 1 and ½ cup’s of water, till it is cooked. It may take 10 -12 mins. (or)  Microwave taro root on very high power(900w)  with 1 cup of water for about 13 minutes.
              
        Cool the cooked taro root, and peel its skin off and slice them into half.

          Mix all the Spice mix(turmeric powder, chilli powder, dhaniya powder and salt) together. Coat the spice mix over the taro root and let it rest with the masala’s for about 10 minutes.

         Heat 3 tbsp’s of oil in a deep pan, add mustard, let it pop, then add asafoetida, cumin and curry leaves, finally add sesame seeds and chopped garlic and onion, fry them till they turn golden in colour.

(        Now add the spice coated taro root to the pan and mix well with the onions. Give a good mix and put flame in simmer. Let the taro root simmer for about 10 minutes in the closed pan.  Make sure to check  in between to avoid burning.  Once the taro root is roasted well, switch off the flame.

Serve the Taro root along with rice and sambhar. Iam sure it will be a good meal!!



Me and my son love Bhindi very much. Usually it used to be Vendakkai poriyal at home. After learning to make bhindi in microwave, I make these Masala stuffed bhindi quite often.  After getting request for Bhindi Fry recipe, I googled and found sanjeev kapoor’s besanwali bhindi fry.  It tasted good as it’s cooked with shallots and besan flour. This Bhindi fry can be had with sambhar rice or Roti.


Microwave oven makes Magic with Bhindi. I microwave chopped Bhindi pieces with a tsp of oil and microwave it on high for 4 minutes. Then i use it for vendakkai sambhar or vendakkai morkuzhambu. It saves time and oil.


Ingredients:

Bhindi / Okra / Vendakkai - 12 (of same size)
Shallots / Small onions – 8 (Peeled and chopped)
Besan flour / Kadala Maavu – 2 tbsp
Oil – 2 tbsp
Mustard – ½ tsp
Curry leaves – 1 sprig

Mix the following powder’s together

Turmeric powder – a pinch
Sambhar Powder or Chilly powder – 1 and half tsp
Dhaniya / Corriander Powder – 1 tsp
Cumin powder – 1 tsp
Dry Mango Powder / Amchur – ½ tsp
Garam masala – ½ tsp
Salt – to taste


Method:

Choose small and tender Bhindi s. It cooks easily and taste’s good too.  Wash the bhindis and wipe them with a clean cloth. Trim the heads of bhindis. Give a slit to all bhindis from top and end it just before its tail.

Mix the powders (turmeric, sambhar, dhaniya, cumin, amchur, garam masala and salt) in a bowl.

Fill the masala powders into the slit of bhindis with a help of a spoon. Half a spoon of masala’s is enough to fill a single bhindi.

Heat Oil in a Pan, add mustard, let it splutter and then add curry leaves along with small onions. Once the small onions are almost cooked, add the besan flour and mix with the onions. Give a minute, till the besan flour gets roasted along with the onions.

Now add the stuffed Bhindis to the pan and give a mix, lower the flame and let the bhindi gets cooked for about 5-7 minutes.  Add little oil, if bhindis start sticking to the pan. Cook till the bhindis shrink and change dark in color.

Or

You can alternatively cook in microwave for easy job. After filling the masala’s into the slit of bhindis, place them in a microwave bowl.  Sprinkle 2 tsp of oil over the bhindis and microwave on high power (900w) for about 4 minutes.  After removing from microwave, Heat Oil in a Pan, add mustard, let it splutter and then add curry leaves along with small onions. Add little salt just enough for small onions. Once the small onions are almost cooked, add the besan flour and mix with the onions. Give a minute, till the besan flour gets roasted along with the onions. Then add microwave cooked bhindis and wrap them up with onions and besan flour.

Garnish with chopped coriander leaves.

Serve with Roti’s or with Rice and Sambhar.

Any South Indian will crave for Sambhar and Potato side-dish. iam not an exceptional. I always want my lunch hot and so cooking just before lunch time is my choice. also i hate to chop vegetables the day before or some hrs before cooking and all those stuffs. i will chop my veggies just before cooking it.

Today soon after i came home after picking my son from school, i kept pressure cooker with rice, and dal for sambhar. and got ready with potatoes to make potato poriyal. Rice, Sambhar and Urulai poriyal got ready in 20 mins. If you have microwave, pop appalams in it. then you could make rasam, which would take less than 10 minutes. enjoy your Lunch within 30 mins with Rice, Sambhar, Poriyal, Appalam, Rasam and Curd. so simple is'nt it.

Potato Poriyal

I tried this potato poriyal like potato podimaas. it came out good. a little tangy from lemon complimented the spicy potatoes. i added grated coconut. coconut and lemon juice are optionals. it comes out tasty and instantly.

Ingredients:

Potatoes - 4
Grated Coconut - 2 tsp's
Lemon Juice - 1/4 tsp

For Tempering:

2 tbsp of Oil
1/2 tsp of mustard
1/4 tsp of cumin
1/2 tsp of split urad dal
1/4 tsp of asafoetida
1 sprig curry leaves
a pinch of turmeric powder
2 tsp's of sambhar powder
1 tsp of corriander powder

Potato Podimaas

Method:

Peel the skin of the Potatoes and chop them into small pieces.

Heat 2tbsp of oil in a Pan, add mustard and let it splutter, add split urad dal, cumin, asafoetida powder, and curry leaves. roast them all. Next add Sambhar powder, a pinch of turmeric powder, Corriander Powder & Salt to taste and saute them in the oil for a minute.

Add the chopped Potatoes to the Pan and mix well with the masala's. simmer the flame and let it rest for a minute, for the potatoes to absorb the flavours of masala's.

Add 1/4 cup of water to the pan , mix well and close the pan with its lid and let the flame be in sim for about 5 mins, till the potatoes are nicely cooked.

After the Potatoes are cooked, remove them from flame,  while removing the poriyal from the pan, also scrap the masala's sticked to the pan. add the grated coconut and lemon juice and mix well.

Serve Hot with Sambhar Rice or Vathakuzhambu Rice.

How to Prepare Sambhar Quick?

Quick Lunch
Lunch Today: Carrot, Mullangi Sambhar, Potato Poriyal


Chop 1 carrot, 1 radish, 1 onion, 1 tomato into pieces. add them all to the 1/4 cup of toor dal with 1 cup of water, a pinch of turmeric powder, a pich of asafoetida and a drop of oil. Pressure Cook all for upto 4 whistles.

You can add other vegetables like Drumstick, brinjal and beans.

Heat a tsp of oil in a pan, add 1/2 tsp mustard, 1/4 tsp fenugreek, a pinch of asafoetida, 1 sprig of curry leaves, 3 dry red chillis's and roast them all.

Now add cooked toor dal and 2 cups of water. add 2 tsp of sambhar powder and a tsp of tamarind paste and mix well. add salt to taste.

Garnish the Sambhar with chopped corriander leaves.

To Make me Eat Fruits will be very tough. My father and me used to have fight on it. the same continues with my husband also. But when my son feeds me any fruits, i will eat. We are Strange Mom and Son!   But I love to eat Vegetables. My meal starts of with small quantity of rice and more vegetables(poriyal).

Whenever I prepare two poriyal's i see to that, two vegetables should be of different colours. if Keerai / Greens are prepared for the day, i avoid Beans and Broad Beans. its simple as no two identical colours on my plate. its good to have different colours of vegetables for a meal.  i found that my Poriyal recipe's are very less  in the blog and thus am in the process of adding two at a time ;)

Avarakaai Poriyal / Broad beans stir fry

I cook this atleast once in a week. This Broad Beans have good fibre content. without googling, thats what i know about the vegetable.

Avarakaai Poriyal
Ingredients:

Avarakaai / Broad Beans - 1/4 kg
Big Onion - 1
Grated Coconut - 2 tbsp's

For Tadka:

1 tsp Oil
1/4 tsp Mustard
1/2 tsp Split Urad Dal
1 sprig Curry Leaves
2 Dry Red Chilli's

Method:

Trim the head and tail part of the Avarakaai / broad beans. Wash them Thoroughly &  (Naar edukkavum).  and chop them into small pieces.

Add a 1/2 cup of water to the chopped avarakaai and boil them for 3-4 minutes.
or
Microwave the avarakaai with little water at very high for about 4 minutes. [Use the leftover water for preparing sambhar or Curry.]

Heat Oil in a Pan, add mustard and let it splutter, add urad dal, red chilli's and curry leaves and roast them. add the cooked avarakaai without any water to the pan and give a stir. add salt to taste and grated coconut to the pan and give a stir.

Remove from the flame and serve with Hot Rice and Ghee.

Cabbage Poriyal with Chick peas / Cabbage Stir Fry

Cabbage Poriyal
Ingredients:

Cabbage - 100gms
Green chilli -2
Boiled chickpeas - 1/4 cup
Onion - 1

For Tadka:

1 tsp oil
1/4 tsp mustard
1/2 tsp split urad dal
1 sprig curry leaves

Method:

Have Pressure Cooked Chickpeas Ready.

Chop the Onion and Cabbage finely.

Heat oil in apan, add mustard & let it splutter, add urad dal, curry leaves , slitted green chilli and roast them.

Now add chopped onion and fry till they turn transparent. add the chopped cabbage an give a stir.

Add boiled chickpeas an salt to taste to the pan an give a stir.

switch off the flame and serve for vathakuzhambu or sambhar rice.

Eating Beetroot is a difficult task for me. so i never pick beets when i go for buying vegetables. But hubby brings atleast 1/2 kg of beets, when he goes to buy vegetables. most of the time i make Beetroot Kootu and this poriyal. I think i have tasted a similar sort of poriyal from Saravana Bhavan. This Poriyal has Chana Dal and Grated Coconut, which will make you eat, even if you are a beetroot hater like me.

Beetroot Poriyal

Ingredients:

Beetroot - 2
Chana Dal - 5 tbsp's
Big Onion - 1
Grated Coconut - 2 tsp's


For Tempering:

Oil - 1 tbsp
Mustard - 1 tsp
Curry Leaves - 8
Split Urad Dal - 1 tsp
Dry Red Chilli - 2
Green Chilli - 1

Method:

1. Soak the Chana Dal in warm water for about 30 mins.

2. Peel the skin of the beetroot and chop then into small pieces.

3. Pressure Cook the Beetroot and Chana Dal for about 4 - 5 whistles.

4. Heat a Pan, add oil and heat it.

5. Add mustard seeds and let it pop and add split urad dal, curry leaves and green chilli & broken red chillis.

6. Now add the Finely Chopped Onion and fry it till it turns translucent.

7. Add Pressure Cooked Chana dal  and Beetroot to the Pan and fry them for 2 minutes in medium flame.

8. Remove the Beetroot's from the flame and add grated coconut and give a stir. transfer to the serving bowl.

Serve Hot with Rice and Ghee. My kid liked it, So Why Don't You Try for your Kid?

Sweet Potato is one of my favourite. In our Village, we cook these sweet potatoes, (sakkaravalli kizhangu in Tamil), by burning them on fire. we remove its outer burnt skin and eat the potato. As a Kid, i will be allowed near stove (viragu aduppu) only if i will eat a burned cooked potato(sutta kizhangu). It's so healthy Root too.

Sweet Potato Roast - Indian Style

On moving to the city, i attempted cooking it on stove flame, but it did'nt taste as good as the one's cooked with viragu aduppu. The recipe, that iam going to share is very simple, but it will work Great. If you love sweet potato, then do try this for sure.

Sakkaravalli kizhangu poriyal
meal today, with rasam, sakkaravalli kizhangu poriyal.


                          
                       Spicy Sweet Potatoes - Indian Style  / Sakkaravalli kizhangu Poriyal


Ingredients:


  • Sweet Potatoes / Sakkaravalli Kizhangu - 4 (or) 300gms
  • Big Red Onion - 1
  • Oil - 2 tbsp's
  • Mustard - 1/4 tsp
  • Curry Leaves - 5
  • Chilli Powder / Sambhar Powder - 2 tbsp's
  • Water - 1/4 cup
  • Asafoetida powder - 1/4 tsp

Method:

Chop one big red onion finely.

Trim the Head and tail of the sweet potato and peel its skin. wash them. Chop them in round shapes and keep aside. they soon change colour, so you soak them in water, till it is to be added on to the pan.

Heat a Pan, add oil & heat it. add mustard, let it pop. add curry leaves & roast it. add 1/4 tsp asafoetida powder.

Add finely chopped onion's and fry them, till they turn translucent. now add the chopped sweet potatoes and mix well with the onion's. add salt to taste and chilli / sambhar powder and mix well.

Now add 1/4 cup water  or to say add water, till the sweet potatoes could immerse in the water on the pan and close it with a lid and lower the flame.

the sweet potatoes gets cooked within 5 mins in the water. now let the sweet potatoes get roasted in the pan for another 3-4 mins. make sure not to burn them.

Serve this spicy sweet potato roast with sambhar rice or with morkuzhambu. i served it with rasam. that was a lovely simple meal we had one day on last week.


Note:

sometimes sweet potato may be new and hard, so it takes lots of time to get cooked. so keep sprinkling water till it gets cooked. overcooking may result in mashy potatoes.


Vendakkai poriyal is one of my favourite from mom. This is her recipe and this recipe got a secret ingredient. i will reveal the secret in the ingredients list. before that let me ramble on these ladies fingers. Ladies Finger always remind me of my mom's fingers. i would say her fingers is the most beautifull one's, Thank God! she passed me 70% of it.

My mom and my grandmom prepares this poriyal for me exactly before and on the day of my mathematics exams. it is told that, on having ladies finger, you can score good marks in maths. Yes i am poor in maths. but i managed to score good marks, all bcoz of Vendakaai!!!

Ladies Finger

We went on a trip to Mysore & Ooty last week. Though Climate was not pleasing, we enjoyed the offseason with less crowd. I bought lots of vegetables from Ooty - Farmer's Market for very low prices. I bought Kg of these ladies fingers for Rs.8. They were so fresh and tender. whereas in chennai, i have to shed Rs. 20 for a Kilo. to get fresh ladies finger from my keera kaara amma. she brings it only on demand that too.



Vendakkai Poriyal Recipe

Prep Time: 10 mins 
Cooking Time: 10 mins  
Serves: 2

Ingredients:


1. Ladies Finger / Okra / Vendakaai - 1 Kg.
2. Red Onion - 1
3. Red Chilli Powder / Sambhar Powder - 3 tsp's
4. Corn Flour / Rice flour - 2 tsp's ( its secret!!)



For Tempering / Thalippu:

1. Oil - 2 tbsp's
2. Mustard - 1 tsp
3. Split Urad Dal - 1 tsp
4. Curry Leaves - 1 sprig

Method:

Trim the head an tails of Ladies finger and slice the Ladies Finger very Finely.

Heat Oil in a Thick Bottomed Pan / Kadaai. add mustard and let it pop. add split urad dal and curry leaves. saute it.

Add chopped Red Onion to the Pan and fry it along. add salt and red chilli powder and saute it.

Now add the finely chopped Okra/ Ladies finger and fry it. it first turns into dark green colour and then it becomes sticky. when it becomes sticky add corn flour or Rice flour to the ladies finger and saute them. fry it for atleast 4-5 mins in slow flame, untill the ladies finger becomes less sticky and cooked.

serve with hot rice with Ghee or with sambhar rice.

okay what does the corn flour do, it helps in preventing the sticky and also it gives its share of taste. You can also add rice flour, it also does the same job and i love the rice flour version than the corn flour version.

When i spotted brussels sprouts at vegetable shop-Pazhamudhir cholai, i grabbed a pack without thinking what to cook with it. I have seen it on Indira's blog, but forgot its name, finally i got its name from the bill given by the shop. The next day i prepared brussels sprouts fry, just as i prepare cabbage stir fry. it tasted good. I also added flax seed powder towards the end, and it gave a nice taste. I add flax seed powder, which has Omega-3 fatty acids, to all my poriyal / stir fry.

Brussels Sprouts Stir Fry

Ingredients:

Brussels Sprouts - 200gms / 20
Red Onion - 1/2
Capsicum / Bell Pepper - few chopped pieces of red and green colour bell pepper.

Oil - 1 tbsp
Mustard - 1/4 tsp
Split Urad dal - 1 tsp
Curry Leaves - 8
Dry Red Chilli - 3

Optional add-on:

Flax seed Powder - 1 tsp
Grated coconut - 2 tbsp's

Method:

Wash the Brussels sprouts and remove the green outer cover of it. slice them into thin slice's.

In a Pan, heat oil, add mustard, when it pop's, add split urad dal, red chilli and curry leaves & roast them.

Add finely chopped onion's and capsicum's and fry along for half a min and then add the chopped brussels sprouts and fry it. it takes some 3-4 mins.

Add salt to taste. you can also add flax seed powder or grated coconut before the final stir.

Serve it with sambhar rice or with some kuzhambu.

The capsicum's and brussels sprouts mingle well and add on flax seed powder gives a different make over to this stir fry.

Life is busy here and iam trying to organize and learn to work. Iam also spending more time towards Nature, which cleanses my mind and helps me to face this world. so do u understand my mind is not stable and thus i could'nt concentrate here. Pray for me. We Love Jack fruits..Whenever we have it, i used to save the seed and prepare curry along with eggplant and drumstick. the combination of all the three in the curry is the best combo not to miss. When i got a pack of Jack fruit seeds, my domestic helper suggested me to try Poriyal/Roast with it. I readily went ahead and we loved it a lot. Here is how i made..

Jackfruit Seed Roast

Get Ready with 20 Jack fruit Seeds / Palakottai, wash them thoroughly and pressure cook them with little water and salt for up to 5 whistles. On pressure Cooking, cool them and remove the outer white skin( this is a time consuming process, but you got to do it.) them cut the seeds into into half and set aside.

Heat a tbsp of oil in a pan, add 1/4 tsp mustard,1/4 tsp urad dal, a stalk of curry leaves, 2 dry red chilli and fry them. Now add jackfruit and let it coat with the oil, add a pinch of turmeric powder, 1/2 tsp sambhar powder, and mix well, so that seeds get coated with masala. Keep stirring in slow flame for about 5 minutes till the raw smell of masala powder goes off.

Serve it with Sambhar Rice or with Rasam Rice. iam sure you will enjoy the combination.



Masala Stuffed Bhindi's - Do u think that it is a tough and long job.. No, its so easy and you can make it in less than 10 minutes, if you have scrapped coconut on hand. I got the recipe from Tarla Dalal's Microwave Cooking Book. Cooking this in Microwave is so easy, and it just takes less oil into it. You can also prepare this in your Pan or Iron Skillet, by just placing the stuffed Bhindi's on the Skillet and leaving 2 tbsp of oil, to the sides of the okra, and letting to get fried for about 3 minutes in slow flame. again flip the bhindi's to the other side and fry them again for 2 minute's.
Masala for Bhindi / Okra
Ingredients:

Grated Coconut - 1/2 cup (half coconut grated)
Bhindi /Okra / Ladies Finger - 20 - 25 no. (roughly 250 gms)
Cumin Powder - 1 tsp
Corriander Powder - 1 tsp
Chilli Powder - 1 tsp
Turmeric Powder - a pinch
Asafoetida /Hing - a pinch
Chopped Corriander Leaves - 2 tbsp
Sesame - 1 tbsp
Oil - 2 tbsp + 2 tsp

Method:

Wash the Okra's /Bhindi and Dry them on Clean Towel. Make sure Okra's are not wet, before you proceed.

In a Cup, add the finely chopped Corriander Leaves, Grated Coconut, chilli powder, corriander powder, cumin powder, turmeric powder, asafoetida, little bit of salt and mix well. add 1 tsp of oil to the Masala and Mix well.

Now Slit the Bhindi's Vertically little deep, so that you have enough space to put in the masala inside the Bhindi's. After Slitting the Bhindi's, Take a Big Pinch of the Masala and stuff it inside the Bhindi, all along the vertical slit. Neatly stuff all the Bhindi's.

If you are using a Microwave, Place the stuffed Bhindi's in a Microwave Safe Plate, Do not place Bhindi's one over the other. sprinkle few drops of oil over the Bhindi and Microwave it on High for about 4 minutes 30 seconds.

Preparing in your Pan or Iron Skillet: Just place the stuffed Bhindi's on the Wide- Skillet and add 2 tbsp of oil, to the sides of the okra, and let it to get fried for about 3 minutes in slow flame. again flip the bhindi's to the other side and fry them again for 2 minute's.

In a small Tadka Skillet, heat a tsp of oil and add sesame seeds and let it pop and add to the stuffed Bhindi's.

Okra's turn so tender on cooking. Iam sure Okra lovers will love this. and this was best with Sambhar Rice.

Bean's Poriyal and Beans Usili are the Poriyal's that i cook alternatively every week. Usili is my favourite, and i love cooking this in microwave for a less oil version of usili. If you feel, that cooking dal's in microwave makes it harder, then you have to sprinkle some water over it, to get them cooked soft.

Bean's Paruppu Usili

A Protein and Fibre Packed South Indian Poriyal.

Bean's Usili - Microwave Version

[Serves - 2]

Soaking Time: 2 hrs.

Cooking Time: 10-15 minutes.

Ingredients:

Bean's - 250 gms
Toor/Tuvar Dal - 1 cup
Chana Dal - 1 cup
Dried Red chillies- 3
Turmeric powder - 1/ 4 tsp
Fennel / Saunf / Sombu - 1/2 tsp
Mustard - 1 tsp
Urad Dal - 1/2 tsp
Curry Leaves- 10
Oil- 1 tsp

Method:

Soak the Toor,Chana dals and chillies for 2 hours. Drain and Grind them with Saunf/fennel, little salt and with 1 tbsp water into a coarse paste. Crumble them into small pieces.

Spread them on a Microwave safe Bowl and Microwave it on High for three minute's.

Chop your bean's into half-inch size. and microwave them on high for about 5 minute's.

In a pan, Heat oil, add mustard and some saunf. add urad dal, and fry till they turn golden color. add Curry leaves, The microwaved and crumbled dal. coat them with oil and fry them for a minute.

Now add the cooked bean's and mix well with the dal. fry them for a minute in a slow flame.

Beans Usili - Microwave Version

Serve hot with Rasam or kuzhambhu.

Why Do we Add Saunf / Sombu ?

Fennel seeds can relax the intestines and reduce digestive disorders. In this way, Hard to digest Dal's easily digest's with the use of saunf.

I was very much less interested in blogging because of the climate over here. As the sun starts to shine again, i feel fresh to try recipe's. last week, we just managed with Rasam. Now slowly iam driving on first gear, before i give full throttle, here is my Beetroot Kootu, which actually i liked it. If any Beetroot hater's reading this, give a try to this simple yummy recipe.

Ingredients:
  • Beetroot-1
  • Onion-1
  • Dry Red chilli-2
  • Green chilli-1
  • Oil-1 tsp
  • Mustard-1/4 tsp
  • Chana Dal-1/4 cup(soaked for 2 hours)
  • Curry Leaf-8/10
  • Garlic-3 cloves
Method:

yyu First Soak the Chana Dal in hot water for 2hrs, or atleast 30 mins. then pressure cook the chana dal, with the chopped Beetroot, salt and garlic with some water. let the whistle count be 4 whistles.

yyu Cut the Onion's finely. In a Pan, Heat the oil and add mustard, when it makes some sound add curry leaf, red and green chilli's. saute them well. now add the onion's and saute them.

yyu When onions are cooked, add the beetroot and chana dal, say the pressure cooked one's to the pan and mix well.

yyu Add salt and let it boil. add water to get a desired consistency.

 UPDATE:

** If you wish to have Pepper spice, just avoid the red chilli and green chilli in the recipe and add pepper powder (1/2 tbsp) and stir well, before you remove the kootu from the flame. [I have prepared and tasted this way, we loved it a lot.]

** If you are not calorie conscious, add a tbsp of ghee, before serving. it enhances the taste.
Now serve it with Hot Rice or with soft chapathi's.

It tasted so good with chana dal. Since i prepare lunch, only for me, this single dish was like a whole meal for me. If you prefer, you can also add coconut, when it is prepared dry, without any water added.

I do not want to blog simple recipe's.. This recipe may be simple, but i felt it is worth of sharing. During these rainy day' s, i want my lunch to be hot, light and satisfying. This Rasam fits all these criteria. Serving some pappad's or some potato chips along with, will be a real filled meal. This is best for digestion and best charger-when you have cold, as the recipe calls for pepper corns.

Ingredients:
  • Pepper-8 corns
  • Cumin-1 tbsp
  • Turmeric Powder-a Pinch
  • Garlic- 5 Big Cloves
  • Corriander Leaves-5 to 6 stems
  • Water- 1 cup
  • Tomato-1
  • Asafoetida Powder-a pinch
  • Red Chilli-1(If you like it to be little more spicy)
  • Oil- 1/2 tsp




Spices for Rasam


Method:

yyu Ground the spices-Garlic(5 cloves), cumin(1 tbsp), Corriander leaves(leaves of 6 stems) and Pepper(8-10). You can use the Pulse button on your mixer grinder to ground the spices. Dont Forget to smell at this stage..a refreshing aroma it is..

yyu In a cup of water, sqeeze the tomato well and set them aside.

yyu In a pan, heat the oil, when heated, add some cumin seeds and asafoetida powder. if you want some extra spice, add red chilli's. Now add the ground mixture and saute it for half a minute.

yyu Add the tomato water and a pinch of turmeric powder and salt required as per your taste. Dont Let it boil. just heating is enough. it just takes another half a minute.
