These Roti's are made in Pressure Cooker. They turned out so perfect like the one's at restaurant's. And more over it can be done so quickly. Here is where i took the recipe from.


Ingredients:
1. Maida/All Purpose Flour- 1 Cup
2. Wheat Flour- 1/4 Cup
3. Curd- 2 spoons
4. Baking Powder- a pinch
5. Warm Milk- 1 Cup

Method:
Mix All Purpose flour with the Wheat Flour, Now sieve it with Baking Powder. add salt and mix well. bring the flour together in a mountain shape and dig a hole in the centre. add the curd on the hole and add the baking powder upon it. leave it for 2 minutes. Now mix the flour with a warm cup of milk. Roll the dough as we do for chapathi's in the round shape and cut it into half shape. Heat a Pressure Cooker/Kadai. Now stick the rolled dough on the wall's of the cooker. leave it for a minute and invert the cooker. and leave it for another half minute. check the naan now..if it is not cooked evenly, cook it directly on the flame.
after it is cooked, you apply butter to it.

I served the above Naan with Vada Curry and boiled potates tempered with mustard and sauted with Kasuri Methi. Both the side dishes suited well for Naan.

Ever Since I started Blogging, I was thinking of preparing this vada curry and blogging this, as i consider i can cook this well tasty. It's here for you now......


To Make Vada's:

Bengal Gram-1 cup(soaked well for 1 hour)

Fennel seeds/sombu-1 spoon

Red Chilli's-3/4

Curry leaves finely chopped- 2 spoons

Salt- to taste

Oil to Fry the Vada's- 2 cup's

Method:
Grind the above all together with two to four spoons of water.Make sure you do not grind them so Tight or Runny.also take care that they are coarsely grind with some whole lentil ungrounded.
Now make a small coin shaped with the grounded paste and fry them in oil till they reach golden colour.
when the vada's get cooled tear them into half and keep it aside.

To Make Curry:

Onion-1(Big one)

Tomatoes-2

Curry leaves-8

Mustard-1/4 spoon

Fennel Seeds-1/4 spoon

Oil-1/4 cup

Grind Together: Ginger-1 inch,Garlic-5 pieces,Onion- 3 spoon's

Powder's list to be added:
1. Salt as per the taste

2. Turmeric Powder- 1/4 spoon

3. Chilli Powder-1 spoon

4. Dhania Powder-2 spoons

5. Curry Leaves Powder-3 spoons

Method:
The gravy for the vada's can be prepared by adding cinnamon,cloves and bay leaf when we start with seasoning.
But I didn't add them..yet it was so tasty with a nice aroma.

Heat oil in a kadai..yes 1/4 cup of oil, it really adds up taste.when the oil gets heated, add mustard, when it starts to make sound, add fennel seeds and curry leaves. fry them well. Now add the Ginger-Garlic-Onion Paste to it and fry well. on frying it, add the finely chopped onions and fry them, add tomatoes and fry them. Now add the powder's as per the order and mix well.it should mix with each other.add little water and let it boil for a minute and add the vada pieces into the curry.mix well, add sufficient water as per the consistency you require and close the kadai with a lid and let it rest for five more minutes in the stove in low flame.
Garnish it with Corriander Leaves before serving.

Best Suitable for Dosa/Chapathi/Roti.

It also goes well with Rice.

This is yet another dish that had never let me down. and iam thanks to this recipe since my Husband accepted me as a good cook when i made this for the first time.

All You Need to Do this Capsi-Paneer are:

1. Paneer Cubes -1 cup
2.Capsicum- 1/2
3.Onions-2
4.Tomatoes-3
5.Corriander Leaves- 1 cup
6.Chilly powder
7.Butter- 1/4 cup
8.salt

Method:

1. Cut the paneer into cubes and roast it in a Tava, without oil. roast it on both the sides. keep it aside.

2.Now have 4 spoons of oil and fry the onions and tomatoes and corriander leaves. fry it well. let them cool and grind it into a paste.

3.Now have oil in kadai and fry the capsicum cutted in cube shapes.

4.After frying it, add fried paneer,the grinded paste, chilly powder, Turmeric powder a pinch and salt. Mix well and let them boil for 3 minutes.

5.Now add the butter and close it with a lid and let it done for 5 minutes. now it is ready to serve.

Ivy Gourd Fry with Almonds..Sounds Different...Right?? I read about this recipe long back in a popular Tamil Monthly Mangayar Malar Supplement on Badam Recipe's. So now its time to showcase to you all the badam delight i had in a different form with a different companion, ivy gourd.



This Ivy Gourd Fry with Almonds goes to Fortune Cooking Contest hosted by my dear friends Nithu and Shriya.

would i need to say about how it tasted..coconut and almonds blenched togeather and fried with ivy gourd's...it's sure it has to be good nna??

Ingredients:

1. Ivy Gourd/Kovakkai- 12
2. Red Onion-1(Medium size)
3. Grated Coconut-1/4 cup
4. Almonds-10
5. Red Chilli's-2(Increase the no. if you want it to be spicy)
6. Oil-1/4 cup
7. Mustard-1/2 spoon

Method:

Cut the ivy Gourd into half. wash it and keep it aside. Grind the grated coconut and the almonds along with chilli and little water coarsely and keep them aside. Now in a kadai, heat the oil, add mustard seeds, when it makes sound, add the onion sliced and fry it. Now add the ivy gourd's and fry. let them get oil coated andstart shrinking. now add the grinded coconut-almond paste to it. keep mixing. on a low flame keep stirring whenever it sticks to the kadai. add salt and fry till they are almost cooked. i prefer the crunchiness in the ivygourd..so i dont cook it to the full.



I had this with Plain Rice..which tasted well..absolute finger licking delight. It is a fatty rich side-dish to the rice. so when you prepare this, prepare something very light, as dal, rasam or sambhar.

Black-Eyed Beans Curry is my favourite one. it taste's well with chapathi's and excellent with Rice.

Ingredients:

1. Black-eyed Beans- 1 Cup(Soaked for overnight)
2. Tomatoes-3
3. Red Chilli's-4
4. Curry Leaves-8
5. Mustard-1 spoon
6. Fenugreek-1/4 spoon
7. Asafoetida powder-a pinch
8. Oil-8-10 spoons

Powder's to be added:

Only when you follow this particular order..it will taste Good. when you change the order of adding these powder's you can feel the taste difference.

1. Turmeric Powder- a pinch
2. Chilli Powder-2 spoons
3. Corriander Powder-3 spoons
4. Cumin Powder-1/4 spoon
5. Curry Leaves Powder- 2 spoons

Optional's:

If you wish You can add two garlic pieces. You can also add Tamarind water to enhance the taste of curry.

Method:

In a Kadai, Heat the oil, add mustard seeds, when it pops up, add asafoetida powder, add fenugreek and red chilli's. when it is fried add the curry leaves and add finely chopped tomatoes. saute it well. when thel all come around togeather, add salt and keep adding the powder's one by one. also keep mixing before adding the sequel powder. now add the pressure cooked(3 whistle's) black-eyed beans to the kadai and mix well. add tamarind water/water(2 cups). close the lid and let the kadai sit in slow flame for about 5-7 minutes.
add chopped corriander leaves before serving.
It Tastes so good with Curd Rice..

Gatte ki sabzi is a dish, that you can never miss out when you have Rajasthani meal. Gatte's are made with besan flour, and this sabzi is just made with gatte and with no other vegetables. any way you can add tomatoes as i did, but its optional.

 
When i first made this sabzi at home, i did not have any idea about it. even i had never tasted it before. now(its been 4 years since i have tried it). i make this sabzi quite often when i run out of vegetables. also i have tasted this sabzi in a rajasthani restaurant. so now i can prepare this quite good with the experiences learned.

gatte ki sabzi

I kept googling on what to try for RCI-Rajasthan hosted by padma. finally i landed on Vee's Gatte ki sabzi. I have tried quite few dishes from her blog...where she explains so neatly, that we cannot get confused with the order of what to do. she is really the best one to narrate the method of cooking.
 
Rajasthani Gatte ki sabzi
 
I can't narrate things like her..but just tell you what i did..well about this sabzi..it was so different in taste. me & hubby loved it a lot. and he asked me to prepare this for lunch regularly in this summer. It pairs well with chapathi as well as with rice.
 
Ingredients:

For the gatte:

Besan flour / Bengal gram flour - 1 cup
Turmeric powder - a pinch
Salt to taste
Red chilli powder - 1 tsp
Kasuri methi - 1/2 tsp
Ajwain / Carrom seeds - 1/4 tsp
Oil - 2 tsp's

For the gravy:

Curd / Yogurt - 1 cup
Tomatoes - 2
Garlic paste - 1 tsp
Red chilli powder - 1 or 2 tsp
Corriander powder - 2 tsp
Cumin powder - 1 tsp

For tempering:

Ghee - 2 tsp + Oil - 1 tsp
Cumin - 1/2 tsp
Hing / Asafoetida - 1/4 tsp

Corriander leaves to garnish

Method:




















1. First, to prepare gatte, in a large bowl, mix besan flour, salt to taste, ajwain seeds, kasuri methi, turmeric powder, red chilli powder and mix well.

2. Now keep sprinkling water and knead to form into a firm and smooth dough. add 2 tsp of oil to the dough and knead again. shape the dough into a 1/2 inch diameter roll.

3. In a wide large bowl / wide pressure cooker pan, add 3 cup's of water and let it boil, once the water starts to boil, put the roll into the water and let the roll cook for about 15 minutes at high flame.
 
4. Once the gatte roll is cooked, remove the gatte seperately from the water and let it cool down. once cooled, slice the gatte into 1/2 inch pieces.

5.Once you have sliced the gatte's, it is optional to fry the gatte's in oil. if you are frying the gatte's they may break up in the oil a little. after frying, they become little crisper, this way you can ensure that the gatte's are fully cooked.
6. Heat a cup of water, put the 2 tomatoes in it and let it boil for 5 mins, so that the tomato skin peel's a little. drain the tomatoes, cool them, peel it's skin, grind them into a smooth tomato puree and set aside.
 
7. Now to prepare the gravy, heat a pan, add 2 tsp's of ghee, add cumin seeds, hing, garlic paste and roaast well. then add the tomato puree and let it boil well and gets thickened for about 1 or 2 mins. Then add the sliced gatte's and mix well. reduce the flame before adding the curd.
 
8. Take a cup of curd and using your whisker or fork, beat the curd well. now add this beaten curd to the gravy in low flame and mix well. then add turmeric powder, red chilli powder, corriander powder, cumin powder, garam masala(optional) to the gravy and mix well. let the mix keep bubbling in low flame for about 5-10 minutes, till you see the oil on the sides of the gravy.
 
9. Remove the gravy from slow flame and garnish with corriander leaves.
 
Serve with rice or roti.

Notes:
 
It is optional to add tomatoes, it just makes the gravy little sour and gives a good red colour to the gravy.
 
Never add curd in high flame, it may curdle and the sabzi may get bad.
